Ingredients
Rice
- 2/3 cup jasmine rice (or your favourite variety of rice)
- 3 tablespoons water
Sauce
- 1.5 tablespoons soy sauce
- 1 tablespoon chili paste
- 1 tablespoon sriracha
- 1 tablespoon honey
- 1 teaspoon ground ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon fish sauce
- 3 cloves garlic (minced)
Meat and Vegetables
- 1/2 tablespoon avocado oil (or olive oil)
- 1/2 pound lean ground beef
- 1/2 cup diced yellow onion
- 1/2 cup diced bell pepper (any colour)
- 2 tablespoons sliced green onion (for garnish)
Instructions
- Cook the rice: Rinse the jasmine rice if desired and cook it according to the package instructions, typically by simmering with water until tender and fluffy. This usually takes about 15-20 minutes depending on your rice variety. While the rice cooks, prepare the sauce and beef mixture.
- Make the sauce: In a medium bowl, whisk together the water, soy sauce, chili paste, sriracha, honey, ground ginger, sesame oil, fish sauce, and minced garlic until well combined. Set this flavorful sauce aside for later use.
- Cook the ground beef and veggies: Heat avocado oil in a large frying pan over medium heat. Add the ground beef and cook it, breaking it into small pieces with a spatula. Continue cooking until the beef is browned and no longer pink, about 8 to 10 minutes. Next, add the diced yellow onion and bell pepper to the pan and cook, stirring occasionally, until the vegetables soften, around 5 minutes.
- Combine the ground beef and veggies with the sauce: Pour the prepared sauce into the pan with the cooked beef and veggies. Stir regularly and cook the mixture until the sauce thickens and reduces slightly, about 2 minutes, allowing the flavors to meld perfectly.
- Assemble: Divide the cooked rice evenly between two bowls. Spoon the spicy ground beef and vegetable mixture over the rice, creating a hearty, flavorful base.
- Garnish and serve: Finish by sprinkling sliced green onions on top for a fresh, vibrant note. Serve immediately and enjoy your spicy ground beef rice bowls packed with bold flavors and satisfying textures.
