Ingredients

Spice Mix and Chicken

  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper

Instructions

  1. Mix the spices: In a large bowl, combine ground cumin, cayenne pepper, turmeric, ground coriander, garlic powder, salt, and black pepper thoroughly to create your spice mix.
  2. Season and sear the chicken: Add the chicken breasts to the bowl with the spice mix and rub thoroughly to evenly coat them. Heat 2 tablespoons of olive or coconut oil in a large skillet over medium heat. Add the chicken breasts and cook 6 to 8 minutes per side until browned and fully cooked through. Transfer the chicken to a plate and cover with foil to keep warm.
  3. Sauté the veggies: In the same skillet, add the remaining 1 tablespoon of oil and heat it. Add the chopped onion, jalapeno pepper, fresh ginger, and minced garlic. Cook, stirring occasionally, until the onion becomes translucent and softened, about 5 minutes.
  4. Add tomatoes and lemon juice: Stir in the chopped tomatoes and freshly squeezed lemon juice. Season with a pinch of salt and pepper. Continue cooking for an additional 5 minutes until the tomatoes soften and meld into the mixture.
