Ingredients

Soup Base

  • 2 tablespoons extra-virgin olive oil
  • 2 medium yellow onions, chopped
  • 3 celery ribs, finely chopped
  • 1 large carrot, peeled and sliced into thin rounds
  • 6 garlic cloves, pressed or minced
  • 4 ½ teaspoons ground cumin
  • ½ teaspoon red pepper flakes (use ¼ teaspoon if sensitive to spice)

Main Ingredients

  • 4 cans (15 ounces each) black beans, rinsed and drained
  • 4 cups (32 ounces) low-sodium vegetable broth

  • 1 to 2 teaspoons sherry vinegar, to taste, or 2 tablespoons fresh lime juice
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large Dutch oven or soup pot over medium heat until shimmering. Add the chopped onions, celery, and sliced carrot with a light sprinkle of salt. Cook the vegetables, stirring occasionally, until they are soft and tender, about 10 to 15 minutes.
  2. Add Spices and Garlic: Stir in the minced garlic, ground cumin, and red pepper flakes. Cook the mixture until the spices become fragrant, about 30 seconds, to release their flavors.
  3. Simmer Soup: Pour in the rinsed black beans and low-sodium vegetable broth. Bring the soup to a simmer over medium-high heat. Once simmering, reduce the heat as needed to maintain a gentle simmer, cooking until the broth is flavorful and the beans are very tender, approximately 30 minutes.
  4. Puree Soup: Transfer about 4 cups of the soup to a stand blender, making sure not to exceed the maximum fill line. Secure the lid and blend until smooth, carefully handling the hot steam. Alternatively, use an immersion blender to blend a portion of the soup directly in the pot for a creamy texture with some chunks remaining.
  5. Finish and Season: Return the pureed soup to the pot and stir in chopped fresh cilantro, then add sherry vinegar or fresh lime juice to brighten the flavors. Season with sea salt and freshly ground black pepper to taste. Stir well and adjust seasoning if needed.
