This dish combines sautéed garlic and cauliflower rice with diced tomatoes, green chilies, and a blend of warm southwestern spices for a deliciously spiced, healthy meal ready in just 15 minutes.
Ingredients
Main Ingredients
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 4 cups cauliflower rice
- 1 10oz. can diced tomatoes with green chiles
Spices
- 1/2 Tbsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp dried oregano
- 1/4 tsp salt
- 1/8 tsp freshly cracked black pepper
Garnish
- 2 green onions, sliced
Instructions
- Prepare the garlic: Mince the garlic cloves finely and add them to a skillet with the olive oil. Sauté over medium heat for about one minute until the garlic is softened and fragrant, being careful not to burn it.
- Cook the cauliflower rice: Add the cauliflower rice to the skillet. Continue to sauté for about five minutes, stirring occasionally, until the cauliflower softens slightly but retains some texture.
- Add tomatoes and spices: Pour in the diced tomatoes with green chiles along with all the juices. Sprinkle in the chili powder, smoked paprika, ground cumin, dried oregano, salt, and freshly cracked black pepper. Stir thoroughly and cook for about five more minutes, allowing most of the liquid to evaporate and the flavors to meld.
- Final seasoning and garnish: Taste the cauliflower rice and adjust the salt or spices if needed. Remove from heat, top with sliced green onions, and serve warm.
Notes
- Use fresh cauliflower rice or store-bought frozen cauliflower rice; just thaw before cooking.
- Adjust chili powder and paprika according to your preferred spice level.
- This dish pairs excellently with grilled chicken or as a base for tacos.
- For a more filling meal, add black beans or cooked corn during the tomato step.
- Leftovers store well in the refrigerator for up to 3 days.
