Ingredients
Coleslaw
- 1/3 cup sour cream
- 3/4 cup mayonnaise
- 2 Tbsp apple cider vinegar
- 2 tsp sugar
- 1 tsp celery seeds
- 1 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 14 oz shredded cabbage and carrots (bagged coleslaw mix)
Russian Dressing
- 1 cup mayonnaise
- 1 1/2 Tbsp sweet pickle relish
- 1 tsp prepared horseradish
- 1 tsp sambal oelek (chili paste)
- 3 Tbsp ketchup
- 2 tsp Worcestershire sauce
- 1/2 tsp kosher salt
- Dash of freshly ground black pepper
Sandwich
- 1 loaf pullman rye bread (1 lb)
- 1 lb corned beef or roast beef (thinly sliced)
- 1 lb turkey or ham (thinly sliced)
- 1/2 lb Swiss cheese (thinly sliced)
Instructions
- Prepare Coleslaw: Whisk together the sour cream, mayonnaise, apple cider vinegar, sugar, celery seeds, kosher salt, and freshly ground black pepper. Gently fold in the shredded cabbage and carrots mixture. Let the coleslaw stand for at least 30 minutes to allow the flavors to meld.
- Drain Coleslaw: Before assembling the sandwiches, drain any excess liquid from the coleslaw to prevent soggy bread.
- Make Russian Dressing: Whisk together mayonnaise, sweet pickle relish, prepared horseradish, sambal oelek, ketchup, Worcestershire sauce, kosher salt, and freshly ground black pepper until the mixture is well combined.
- Prepare Bread: Remove the crusts from the pullman rye bread loaf and cut into a rectangular block. Then, slice the bread horizontally into very thin slices about 1/4 inch thick.
- Layer First Meat: Lay down one long slice of bread and evenly layer on one-third of the corned beef or roast beef.
- Add Coleslaw: Dollop some drained coleslaw over the meat and spread it evenly.
- Spread Russian Dressing and Add Cheese: Spread Russian dressing over the coleslaw layer, then add a couple of slices of Swiss cheese on top.
- Layer Second Meat: Place another slice of bread on top and repeat the layering process with the turkey or ham, coleslaw, Russian dressing, and Swiss cheese.
- Finish Sandwich: Top with a final slice of bread, then cut into rectangles or squares for serving.
- Adjust to Taste: Feel free to vary the ratio of meat, slaw, dressing, and cheese layers based on your personal preference.
