Ingredients

Crust

  • 2 cups almond flour
  • ⅓ cup unsalted butter, melted
  • 3 tablespoons maple syrup

Almond Butter Caramel

  • 1 cup brown sugar
  • 3 tablespoons unsalted butter
  • ½ cup heavy cream
  • ⅓ cup creamy almond butter
  • 1 tablespoon vanilla extract
  • ½ cup raw almonds, chopped

Chocolate Ganache

  • 6 ounces high-quality semi-sweet chocolate, chopped
  • ⅓ cup heavy cream
  • ½ teaspoon vanilla extract
  • Flaked salt (for sprinkling)


Instructions

  1. Preheat and prepare tart pan: Preheat the oven to 350°F (175°C). Spray a 9-inch round tart pan with nonstick spray to prevent sticking.
  2. Make the crust: In a large bowl, combine the almond flour, melted butter, and maple syrup. Stir until the mixture is fully moistened and holds together. Press the dough evenly into the tart pan, including up the sides slightly to form the crust.
  3. Bake the crust: Bake in the preheated oven for 10 to 12 minutes or until the crust turns slightly golden. Remove from oven and let it cool completely to set.
  4. Prepare almond butter caramel: In a medium saucepan over medium-low heat, combine the brown sugar, unsalted butter, heavy cream, and creamy almond butter. Whisk continuously until the mixture is bubbling, cooking for 5 to 6 minutes until it thickens slightly and becomes smooth.
  5. Add vanilla and cool caramel: Remove from heat and stir in the vanilla extract. Allow the caramel to cool to room temperature; it will thicken as it cools.
  6. Assemble tart with caramel and almonds: Pour the cooled almond butter caramel into the cooled tart crust. Sprinkle the chopped raw almonds evenly on top. Place the tart in the refrigerator to chill while preparing the ganache.
  7. Make chocolate ganache: Place the chopped semi-sweet chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream over low heat just until warm and edges begin to bubble. Pour the warm cream over the chocolate and let it sit for 1-2 minutes to soften.
  8. Stir ganache: Stir continuously until the chocolate completely melts and the mixture becomes smooth, about 2 to 3 minutes. Stir in the vanilla extract.
