Description

This delicious S’mores Baked Oatmeal combines the classic flavors of s’mores with the hearty goodness of baked oats. Perfect for a cozy breakfast or brunch, it features rolled oats baked with almond milk, maple syrup, applesauce, and topped with marshmallows, chocolate chips, and graham crackers for a sweet, nostalgic treat.

Ingredients

Dry Ingredients

  • 2 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 Tablespoon ground flaxseed
  • ¼ cup chopped/crushed graham crackers

Wet Ingredients

  • 2 cups unsweetened almond milk
  • ¼ cup pure maple syrup (plus more for serving)
  • 1 Tablespoon melted coconut oil
  • ½ cup applesauce
  • 1 teaspoon vanilla extract

Toppings

  • ½ cup chopped chocolate or chocolate chips (divided)
  • ½ cup mini marshmallows (divided)

Instructions

  1. Prep: Preheat your oven to 375°F (190°C) and lightly spray an 8×8 inch square baking dish with cooking spray to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the rolled oats, almond milk, pure maple syrup, baking powder, sea salt, ground flaxseed, melted coconut oil, applesauce, vanilla extract, along with ¼ cup of the chocolate chips and ¼ cup of the mini marshmallows. Stir everything thoroughly until well mixed.
  3. Pour Mixture: Carefully pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
  4. Add Toppings: Sprinkle the top evenly with the crushed graham crackers, then scatter the remaining ¼ cup chocolate chips and ¼ cup mini marshmallows over the surface.
  5. Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean, indicating that the oatmeal is fully cooked through.
  6. Cool and Serve: Remove from the oven and let the baked oatmeal cool for 10-15 minutes. Then, cut into 6 portions and serve warm. You can drizzle extra maple syrup on top if desired for added sweetness.

Notes

  • For a vegan version, ensure marshmallows are vegan or omit them altogether.
  • You can substitute almond milk with any other plant-based milk or dairy milk.
  • Adjust sweetness by adding more or less maple syrup according to taste.
  • Adding a pinch of cinnamon or nutmeg can add extra warmth and flavor.
  • Store leftovers in an airtight container in the fridge for up to 4 days and reheat before serving.
