Description

Crispy and flavorful smash potatoes made with golden petite potatoes, drizzled with olive oil, sprinkled with sea salt and fresh rosemary, then roasted to perfection until golden and crispy on the edges.


Ingredients

Potatoes

  • 2 pounds Gold petite potatoes

Seasoning & Oil

  • 3 tablespoons olive oil
  • Sea salt, to taste
  • Fresh rosemary, to taste


Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Boil Potatoes: Place the gold petite potatoes in a pot and fill with enough water to cover them by about 1 inch. Bring the water to a boil and cook the potatoes until they are tender when pierced with a knife, about 15 to 20 minutes.
  3. Drain and Cool: Drain the cooked potatoes and let them cool slightly so they are easier to handle without breaking apart.
  4. Smash Potatoes: Arrange the potatoes evenly on the prepared baking sheet. Using the back of a measuring cup or a flat utensil, gently press down on each potato to flatten it to about half its original thickness without breaking them completely apart.
  5. Season: Drizzle the flattened potatoes with olive oil. Generously sprinkle sea salt and fresh rosemary leaves over each potato to infuse flavor while roasting.
  6. Roast: Roast the potatoes in the preheated oven for 25 to 35 minutes or until they develop a golden-brown color and crispy edges, turning them halfway through if desired for even crisping.

Notes

  • Use small to medium-sized gold potatoes for the best texture and flavor.
  • Fresh rosemary adds a wonderful aroma; you can substitute with dried rosemary if fresh is unavailable.
  • For extra crispiness, increase oven temperature to 400°F and reduce roasting time accordingly, but watch closely to avoid burning.
  • Can be served as a side dish with grilled meats, fish, or vegetables.
  • Leftover smashed potatoes can be reheated in the oven to restore crispiness.
