Description

This Slow Cooker Sausage Casserole is an easy and comforting one-pot meal perfect for busy days. Featuring browned sausages simmered with tomatoes, cannellini beans, carrots, and warming spices like cumin and smoked paprika, this hearty dish delivers rich flavors with minimal effort. Just brown the sausages, add the ingredients to your slow cooker, and enjoy after several hours of gentle cooking for tender, flavorful results.

Ingredients

Meat and Oil

  • 2 tsp Sunflower oil (Olive oil is fine too)
  • 454 g Sausages (Usually 6 or 8 sausages)

Vegetables

  • 1 Large Red onion (Peeled and chopped)
  • 3 Cloves Garlic (Peeled and crushed)
  • 300 g Carrots (Peeled and chopped)

Canned Goods and Spices

  • 800 g Tinned chopped tomatoes
  • 400 g Tinned cannellini beans (Drained and rinsed)
  • 2 tbsp Tomato puree
  • 2 tsp Cumin
  • 2 tsp Sweet smoked paprika
  • 1 Beef stock cube (Undiluted, crumbled)
  • Sea salt and freshly ground black pepper (To taste)

Instructions

  1. Brown the Sausages: Heat the sunflower oil in a pan or the slow cooker pan if hob-safe. Add the sausages and fry them until they are browned all over. This step develops the sausages’ flavor and adds a caramelized crust.
  2. Add Remaining Ingredients: Place the browned sausages into the slow cooker. Add the chopped red onion, crushed garlic, tinned chopped tomatoes, drained cannellini beans, tomato puree, cumin, sweet smoked paprika, crumbled beef stock cube, chopped carrots, sea salt, and freshly ground black pepper. Stir everything together thoroughly to combine flavors.
  3. Cook in Slow Cooker: Cover with the lid and cook on HIGH for 6 hours or LOW for 8 hours. The slow cooking allows the sausages to become tender and the flavors to meld beautifully into a rich casserole.
  4. Serve: Before serving, stir the casserole well. Optionally, cut the sausages into pieces using scissors for easier serving. Enjoy hot as a comforting meal.

Notes

  • Use olive oil as a substitute for sunflower oil if preferred.
  • Make sure to peel and chop the red onions and carrots evenly to ensure consistent cooking.
  • Adjust seasoning with sea salt and pepper according to taste after cooking.
  • Cutting sausages before serving helps distribute meat evenly for easier eating.
  • Using a hob-safe slow cooker pan can save time and reduce washing up by browning sausages directly in the slow cooker insert.
