Ingredients
Meat
- 1 pound beef kielbasa, cut into 2-inch pieces
Vegetables
- 1 pound fresh green beans, ends trimmed and cut into thirds (can use 1 to 1.5 pounds)
- 3 tomatoes, chopped
- 2 potatoes, chopped (no need to peel)
- 1 medium onion, peeled and chopped
- 2 cloves garlic, minced
Liquids & Seasonings
- 1 cup chicken broth
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Prepare Ingredients: Cut the beef kielbasa into 2-inch pieces, trim and cut the green beans into thirds, chop tomatoes, potatoes, and onion, and mince the garlic cloves to have all ingredients ready to go.
- Combine Ingredients in Slow Cooker: Place the chopped kielbasa, green beans, tomatoes, potatoes, onion, and garlic into the slow cooker. Pour in 1 cup of chicken broth and add brown sugar, salt, and pepper. Stir gently to combine everything evenly.
- Cook: Close the lid of the slow cooker and set it to cook on HIGH for 4 hours. This allows all the flavors to meld and the vegetables and kielbasa to cook thoroughly.
- Serve: After cooking, serve the kielbasa and green beans hot, either on their own or over cooked rice or egg noodles for a hearty and satisfying meal. Enjoy!
Notes
- You can adjust the amount of green beans based on availability, between 1 and 1.5 pounds.
- No need to peel the potatoes; leaving the skin on adds texture and nutrients.
- Serving over rice or egg noodles is recommended to make the dish more filling.
- If you prefer a lower salt dish, reduce the added salt or use low-sodium chicken broth.
- This recipe is very versatile and can be adapted with other vegetables if desired.
