Description

Tender and flavorful Slow Cooker French Dip Sandwiches perfect for an easy and delicious meal. Slow-cooked chuck roast is seasoned and cooked until shreddable, then served on crusty rolls with melted Swiss or provolone cheese, with rich beef au jus for dipping.

Ingredients

For the Roast

  • 2 Tablespoons olive oil
  • 2 1/2 to 3 pounds beef chuck roast
  • Kosher salt, to taste
  • Freshly ground pepper, to taste
  • 2 (1-ounce) packages dry onion soup mix
  • 2 cups water
  • 2 (14.5-ounce) cans beef broth

For Serving

  • 6-8 slices Swiss or provolone cheese
  • 6-8 crusty rolls (such as ciabatta)

Instructions

  1. Season and Heat Oil: Heat olive oil in a large skillet over medium-high heat. While the oil is heating, generously season all sides of the chuck roast with kosher salt and freshly ground pepper.
  2. Sear the Roast: When the oil starts to shimmer, carefully place the roast in the hot pan and sear it on all sides by letting it sit without moving for a minute or two on each side before flipping. This quick browning adds flavor and seals in the juices.
  3. Transfer to Slow Cooker: Transfer the seared roast along with any pan juices into the slow cooker. Sprinkle dry onion soup mix evenly over the roast, then add water and beef broth to the slow cooker.
  4. Slow Cook the Roast: Cook on high for 4-6 hours or on low for 8-10 hours until the meat is very tender and shreds easily with a fork.
  5. Shred the Meat: Carefully remove the roast from the slow cooker and shred it using two forks.
  6. Assemble Sandwiches: Pile shredded meat onto sliced crusty rolls, then top with a slice of Swiss or provolone cheese.
  7. Broil to Melt Cheese: Place the assembled sandwiches under the broiler just until the cheese melts and the buns start to toast lightly.
  8. Serve with Au Jus: Serve sandwiches warm with the cooking juices from the slow cooker as a flavorful au jus for dipping.

Notes

  • For an extra flavorful au jus, skim any excess fat from the slow cooker juices before serving.
  • Use crusty rolls like ciabatta or hoagie rolls for the best texture in your sandwiches.
  • You can adjust seasoning by adding garlic powder or fresh herbs to the onion soup mix if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm the meat and juices together on the stovetop over low heat and then assemble sandwiches fresh.
