Description

This Slow Cooker Crustless Brown Sugar Pumpkin Pie is a comforting and easy-to-make dessert that uses pumpkin puree and warm spices, cooked gently in a slow cooker for a creamy, custard-like texture without the fuss of a crust.

Ingredients

Slow Cooker Crustless Brown Sugar Pumpkin Pie Ingredients

  • 15 oz. can Libby’s pumpkin puree (not the can with seasonings)
  • 12 oz. can evaporated milk
  • 2 eggs
  • 3/4 cup brown sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/8 tsp. ground cloves
  • 1/4 tsp. ground cardamom
  • 1/2 tsp. salt
  • Non-stick spray for lining the slow cooker

Instructions

  1. Prepare the slow cooker: Line a 6-quart or larger slow cooker with two pieces of heavy-duty foil, layering them to create a bowl shape at the bottom to hold the pie mixture.
  2. Mix ingredients: In a medium bowl, whisk together the pumpkin puree, evaporated milk, eggs, brown sugar, cinnamon, nutmeg, cloves, cardamom, and salt until the mixture is smooth and well combined.
  3. Prepare the slow cooker bowl: Spray the foil-lined slow cooker bowl with non-stick spray to prevent sticking.
  4. Pour in the mixture: Pour the pumpkin filling into the foil-lined slow cooker bowl evenly.
  5. Cook the pie: Cover the slow cooker with the lid and cook on HIGH for 2 hours and 30 minutes or until the filling is fully set without stirring. Keep the lid on throughout cooking.
  6. Cool the pie: After cooking, carefully remove the lid. Lift the ceramic insert from the slow cooker base and place it on a cooling rack for about 30 minutes to slightly cool the pie.
  7. Serve: Serve warm with ice cream or chill by placing the insert in the fridge to serve cold. For easier removal, it is best to chill completely before taking the pie out of the foil.

Notes

  • Substitute brown sugar with white sugar in equal amounts.
  • For a lower-calorie option, use 1/4 cup Pyure Stevia instead of brown sugar.
  • Use 4 egg whites instead of 2 whole eggs for a lighter custard.
  • Fat-free evaporated milk can be used without affecting the quality.
  • Chilling the pie fully makes it easier to remove from the foil lining.
