Description
This Slow-Cooker Cheese Dip is a warm, cheesy, and flavorful party favorite perfect for gatherings. Ground beef, spicy pork sausage, Velveeta cheese, and diced tomatoes with green chiles combine to create a creamy, savory dip that pairs wonderfully with tortilla chip scoops and fresh vegetable sticks like red pepper and cucumber.
Ingredients
Meat
- 1 pound ground beef
- 1/2 pound bulk spicy pork sausage
Cheese and Vegetables
- 2 pounds cubed Velveeta cheese
- 2 cans (10 ounces each) diced tomatoes and green chiles
For Serving
- Tortilla chip scoops
- Red pepper sticks
- Cucumber sticks
Instructions
- Brown the Meat: In a large skillet over medium heat, cook the ground beef and spicy pork sausage together. Break the meat apart as it cooks until no longer pink. Drain any excess grease to avoid an oily dip. Transfer the cooked meat to a 3- or 4-quart slow cooker.
- Add Cheese and Tomatoes: Stir the cubed Velveeta cheese and the diced tomatoes with green chiles into the slow cooker with the meat. These will melt together to form a creamy, cheesy dip. Cover the slow cooker with the lid.
- Cook the Dip: Set your slow cooker to low and let the mixture cook for 4 to 5 hours. Stir occasionally to ensure even melting of the cheese and to prevent sticking to the sides. Once the cheese has completely melted and the dip is creamy, it is ready to serve.
Notes
- Drain excess grease after browning the meat to keep the dip from becoming greasy.
- Stir the dip every so often while cooking to prevent cheese from sticking and ensure even melting.
- Serve warm with tortilla chip scoops and fresh vegetable sticks for dipping.
- This dip can be kept warm in the slow cooker on the ‘warm’ setting for serving over a longer period.
- For a spicier kick, add extra diced green chiles or a dash of hot sauce.
