Description

This Slow Cooker Cabbage Roll Casserole offers a comforting and flavorful twist on traditional cabbage rolls, combining lean ground turkey or beef with fresh vegetables and a savory tomato sauce slow-cooked to perfection. It’s an easy, hands-off meal perfect for busy days.

Ingredients

Meat

  • 1 – 1 1/2 lb lean ground turkey or extra lean ground beef

Vegetables

  • 2 cups chopped onions
  • 1/2 cup chopped green pepper
  • 3 garlic cloves, crushed
  • 1 small head green cabbage, coarsely chopped

Seasonings

  • 1/4 – 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon sugar

Canned Goods

  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce (optionally add another 8-15 ounces for more sauce)

Instructions

  1. Prepare the slow cooker: Spray the crock pot with nonstick cooking spray to prevent sticking and ease cleanup.
  2. Add the ground meat: Crumble the raw ground turkey or beef and spread it evenly along the bottom of the crock pot.
  3. Add vegetables and seasonings: Layer the chopped onions, green pepper, crushed garlic, salt, pepper, thyme, and chopped cabbage on top of the meat.
  4. Pour diced tomatoes: Pour the undrained can of diced tomatoes evenly over the layered ingredients.
  5. Add tomato sauce and sugar: Mix the sugar into the tomato sauce and pour it over everything in the crock pot. If you prefer more sauce, add an additional 8- to 15-ounce can of tomato sauce.
  6. Cook: Cover and cook on low for about 8 hours or on high for approximately 4 hours, allowing flavors to meld and ingredients to become tender.
  7. Finish and serve: When cooking is complete, remove the lid and stir thoroughly to combine all ingredients. Serve warm.

Notes

  • You can substitute ground beef with ground turkey for a leaner option.
  • Adding an extra can of tomato sauce will increase the sauciness and moisture.
  • For a spicier version, add red pepper flakes or chopped jalapeños.
  • Leftovers can be refrigerated and reheated within 3 days.
  • This dish pairs well with crusty bread or steamed rice.
