  • 8 Chicken Thighs (Approx 1 Kg)

Apricot Mixture

  • 400 Gram Can of Apricot Halves, drained
  • 400 ml Apricot Nectar

Seasoning

  • 1 Sachet French Onion Soup Mix (29 grams)
  • 1 Tablespoon Curry Powder
  • 2 Tablespoons Soy Sauce
  • 2 teaspoons Cornflour (optional, for thickening)


Instructions

  1. Prepare Slow Cooker: Lightly spray the slow cooker bowl with cooking spray to prevent sticking. Ensure your slow cooker is clean and ready, preferably a 6-liter capacity for this recipe.
  2. Trim Chicken: Remove any visible fat from the chicken thighs to reduce excess grease and place the thighs evenly at the bottom of the slow cooker.
  3. Add Apricots: Drain the canned apricot halves thoroughly and arrange them over the chicken in the slow cooker, distributing them evenly.
  4. Mix Sauce: In a jug or bowl, combine the apricot nectar, French onion soup mix, curry powder, and soy sauce. Whisk thoroughly to create a smooth sauce.
