Ingredients

Crust

  • 22 regular Oreo cookies (not Double Stuf)
  • 5 Tablespoons (71g) unsalted butter, melted

Chocolate Mousse Layer

  • 8 ounces (226g) unsweetened chocolate, finely chopped (two 4-ounce bars)
  • 2 Tablespoons (28g) unsalted butter
  • 4 large egg whites (120g)
  • 1 cup (200g) granulated sugar
  • 1/4 teaspoon cream of tartar
  • 2 cups (480ml) heavy cream, cold
  • 6 whole Oreos, crushed into crumbs (68g)

Whipped Cream Topping

  • 1 cup (240ml) heavy cream, cold
  • 2 Tablespoons granulated sugar
  • 1/2 teaspoon pure vanilla extract
  • Optional: chocolate curls or shavings for topping


Instructions

  1. Make the crust: Preheat the oven to 350°F (177°C). In a food processor or blender, pulse 22 Oreos (including cream filling) into fine crumbs. Transfer crumbs to a medium bowl, add melted butter, and stir until well combined and thick. Press the mixture firmly into the bottom and up the sides of an ungreased 9-inch pie dish to form a compact crust. Bake for 10 minutes, then place on a cooling rack until completely cooled.
  2. Melt the chocolate: Microwave the chopped unsweetened chocolate and 2 tablespoons butter together in a large heat-proof bowl, stirring every 20 seconds until fully melted and smooth. Set aside to cool slightly.
  3. Prepare the meringue: In a heat-proof bowl or upper part of a double boiler, combine egg whites, sugar, and cream of tartar. Place over simmering water, ensuring bowl doesn’t touch water. Whisk constantly until sugar dissolves and mixture reaches 160°F (71°C) on a thermometer.
  4. Whisk the meringue: Transfer the heated egg white mixture to a stand mixer bowl or heat-safe bowl for a hand mixer. Beat on high speed until soft, glossy peaks form, about 5–6 minutes. Gently fold the melted chocolate into the meringue until fully combined.
  5. Whip the heavy cream for mousse: Using a clean bowl and whisk attachment, whip 2 cups cold heavy cream on medium-high speed until medium to stiff peaks form, about 3–4 minutes. Carefully fold the whipped cream into the chocolate mixture without deflating it.
  6. Assemble mousse layer: Spread half of the chocolate mousse evenly into the cooled pie crust. Sprinkle crushed Oreo crumbs over the mousse. Top with remaining mousse, mounding it in the center to create a dome. Refrigerate the pie while making the whipped cream topping.
  7. Make the whipped cream topping: Whip 1 cup cold heavy cream with 2 tablespoons sugar and 1/2 teaspoon vanilla extract on medium-high speed until medium peaks form, about 3 minutes. Keep the peaks somewhat soft for easy spreading.
  8. Finish the pie: Remove pie from fridge and gently spread the whipped cream topping over the mousse, maintaining the dome shape. Garnish with optional chocolate curls or shavings. Refrigerate uncovered for at least 4 hours or up to 1 day.
  9. Serve and store: Let the pie sit at room temperature for 10 minutes before slicing. Store any leftovers covered in the refrigerator for up to 4 days.
