Description

A hearty and nutritious Skillet Sweet Potato Kale Hash that’s perfect for a wholesome breakfast or brunch. This recipe combines tender sweet potatoes, sautéed kale, and perfectly cooked eggs, all seasoned with savory spices and garnished with fresh cilantro and creamy avocado. Ready in just 30 minutes, it’s a flavorful and healthy meal to start your day off right.

Ingredients

Vegetables & Herbs

  • 1/2 cup diced red onion
  • 3 1/2 cups cubed and peeled sweet potatoes
  • 1 Tablespoon minced garlic
  • 3 cups kale, finely chopped
  • 1/4 cup chopped cilantro for garnish
  • 1 medium avocado

Seasonings

  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper

Other Ingredients

  • 2 Tablespoons olive oil
  • 4 large eggs

Instructions

  1. Saute Onion: Heat the olive oil in a pan over medium heat. Add the diced red onion and sauté for about 5 minutes until softened and slightly caramelized.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
  3. Cook Sweet Potatoes & Spices: Add the cubed sweet potatoes to the pan along with salt, paprika, cumin, and black pepper. Cover the pan and cook for about 15 minutes, stirring every 5 minutes to ensure even cooking, until the sweet potatoes are fork tender.
  4. Add Kale: Mix in the finely chopped kale and sauté for about 2 minutes until wilted and well combined with the sweet potatoes and onions.
  5. Add Eggs & Cook: Using a spoon, make 4 wells in the hash mixture. Crack one egg into each well. Cover the skillet and cook the eggs according to your preference—about 4-6 minutes for runny yolks or longer for firmer eggs.
  6. Garnish & Enjoy: Remove the skillet from heat. Garnish the hash with chopped cilantro and serve immediately with sliced avocado and toast if desired. Enjoy your wholesome and delicious meal!

Notes

  • You can substitute kale with spinach or Swiss chard if preferred.
  • For a vegan version, omit the eggs and add tofu scramble or avocado slices for protein.
  • Adjust spices according to your personal taste for more heat or smokiness.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet or microwave.
  • Adding a splash of lemon juice before serving brightens the flavors.
