Description

This Skillet Lasagna recipe offers a quick and delicious one-pan twist on classic lasagna, combining Italian sausage, tender noodles, and three types of cheese cooked directly in a skillet. Ready in just 35 minutes, it’s a comforting and hearty meal perfect for busy weeknights.

Ingredients

Protein & Dairy

  • 1/2 lb. Italian Sausage ($2.25)
  • 1 cup ricotta cheese ($1.99)
  • 1/4 cup grated Parmesan cheese ($0.40)
  • 1 cup shredded mozzarella cheese ($1.17)

Produce & Pantry

  • 1 Tbsp olive oil ($0.16)
  • 2 cloves garlic ($0.16)
  • 24 oz. pasta sauce ($1.89)
  • 1 cup water
  • 1/2 tsp Italian seasoning ($0.05)
  • 9 lasagna noodles (broken into 1-2 inch pieces) ($0.90)
  • 1/4 tsp salt ($0.02)
  • 1/4 tsp freshly cracked black pepper ($0.02)

Instructions

  1. Cook the Sausage: Add the Italian sausage and olive oil to a large deep skillet. Cook over medium heat until the sausage is fully cooked through, breaking it into smaller pieces as it cooks.
  2. Add Garlic: Mince the garlic cloves and add them to the skillet with the cooked sausage. Sauté together over medium heat for an additional one minute, allowing the garlic to become fragrant.
  3. Combine Sauce Ingredients: Pour the pasta sauce, Italian seasoning, and water into the skillet. Stir well to combine all the ingredients evenly.
  4. Add Noodles: Break the lasagna noodles into 1-2 inch pieces and stir them into the sauce mixture in the skillet, ensuring they are submerged.
  5. Bring to Boil: Cover the skillet with a lid and increase the heat to medium-high. Allow the sauce to come to a gentle boil.
  6. Simmer the Noodles: Once boiling, stir briefly to prevent sticking, replace the lid, then reduce heat to medium-low. Let the noodles simmer in the sauce, stirring occasionally, until tender, about 15 minutes. Add more water if the sauce thickens too much before noodles are cooked.
  7. Prepare Cheese Mixture: Meanwhile, in a separate bowl, combine the ricotta cheese, grated Parmesan, salt, and freshly cracked black pepper. Mix thoroughly.
  8. Add Cheese Toppings: When noodles are tender, dollop the ricotta mixture evenly over the noodles in the skillet. Then sprinkle shredded mozzarella cheese over the top.
  9. Melt and Brown Cheese: Place the skillet under your oven’s broiler for a few minutes until the cheese melts and lightly browns. Use an oven-safe skillet and remove the lid before broiling. Alternatively, cover and cook on medium-low heat until cheese melts. Serve hot and enjoy!

Notes

  • Break the lasagna noodles into smaller pieces to cook evenly and fit in the skillet.
  • If you don’t have an oven-safe skillet, skip broiling and just melt the cheese on the stovetop.
  • Add more water during simmering if the sauce reduces too much before noodles are fully tender.
  • Use mild or spicy Italian sausage based on your heat preference.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
