Ingredients
Protein & Dairy
- 1/2 lb. Italian Sausage ($2.25)
- 1 cup ricotta cheese ($1.99)
- 1/4 cup grated Parmesan cheese ($0.40)
- 1 cup shredded mozzarella cheese ($1.17)
Produce & Pantry
- 1 Tbsp olive oil ($0.16)
- 2 cloves garlic ($0.16)
- 24 oz. pasta sauce ($1.89)
- 1 cup water
- 1/2 tsp Italian seasoning ($0.05)
- 9 lasagna noodles (broken into 1-2 inch pieces) ($0.90)
- 1/4 tsp salt ($0.02)
- 1/4 tsp freshly cracked black pepper ($0.02)
Instructions
- Cook the Sausage: Add the Italian sausage and olive oil to a large deep skillet. Cook over medium heat until the sausage is fully cooked through, breaking it into smaller pieces as it cooks.
- Add Garlic: Mince the garlic cloves and add them to the skillet with the cooked sausage. Sauté together over medium heat for an additional one minute, allowing the garlic to become fragrant.
- Combine Sauce Ingredients: Pour the pasta sauce, Italian seasoning, and water into the skillet. Stir well to combine all the ingredients evenly.
- Add Noodles: Break the lasagna noodles into 1-2 inch pieces and stir them into the sauce mixture in the skillet, ensuring they are submerged.
- Bring to Boil: Cover the skillet with a lid and increase the heat to medium-high. Allow the sauce to come to a gentle boil.
- Simmer the Noodles: Once boiling, stir briefly to prevent sticking, replace the lid, then reduce heat to medium-low. Let the noodles simmer in the sauce, stirring occasionally, until tender, about 15 minutes. Add more water if the sauce thickens too much before noodles are cooked.
- Prepare Cheese Mixture: Meanwhile, in a separate bowl, combine the ricotta cheese, grated Parmesan, salt, and freshly cracked black pepper. Mix thoroughly.
- Add Cheese Toppings: When noodles are tender, dollop the ricotta mixture evenly over the noodles in the skillet. Then sprinkle shredded mozzarella cheese over the top.
- Melt and Brown Cheese: Place the skillet under your oven’s broiler for a few minutes until the cheese melts and lightly browns. Use an oven-safe skillet and remove the lid before broiling. Alternatively, cover and cook on medium-low heat until cheese melts. Serve hot and enjoy!
Notes
- Break the lasagna noodles into smaller pieces to cook evenly and fit in the skillet.
- If you don’t have an oven-safe skillet, skip broiling and just melt the cheese on the stovetop.
- Add more water during simmering if the sauce reduces too much before noodles are fully tender.
- Use mild or spicy Italian sausage based on your heat preference.
- Leftovers keep well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
