Instructions
- Heat the oil: Heat the grapeseed oil in a large, non-stick skillet over medium-high heat. This step ensures the oil is hot enough for sautéing the vegetables properly.
- Cook the carrots: Add the sliced carrots to the skillet and cook for about 3 minutes to start softening these firmer vegetables.
- Add remaining vegetables and seasonings: Add zucchini, summer squash, bell peppers, oregano, garlic powder, paprika, salt, and pepper. Stir well to combine all ingredients evenly.
- Sauté covered: Reduce the heat to medium, cover the skillet with a lid, and cook for 5-7 minutes while stirring occasionally, allowing the vegetables to steam and soften without losing their texture.
- Add plant butter: Turn off the heat and place the plant butter on top of the cooked vegetables. Cover again and let it melt for about 1 minute, enriching the dish with a creamy finish.
- Incorporate fresh herbs and serve: Stir in the chopped dill or parsley thoroughly, then serve immediately for the freshest flavor.
