Ingredients
Shrimp and Seasoning
- 20 small shrimp, uncooked, peeled and deveined
- 1 tbsp taco seasoning
- 1 tbsp olive oil
Tacos
- 20 tortilla scoops
- 1 cup finely chopped cabbage
- 1 avocado, pitted and diced
- Cilantro to taste
- Sriracha sauce (optional, to taste)
Cilantro Cream Sauce
- 1 cup sour cream
- 1/2 bunch cilantro, finely chopped
- 1/2 lime, juiced
- Salt to taste
- Pepper to taste
Instructions
- Season the Shrimp: Place the shrimp and taco seasoning in a Ziploc bag and shake well until all shrimp are evenly coated with the seasoning.
- Cook the Shrimp: Heat olive oil in a large pan over medium heat. Add the seasoned shrimp and cook for about 2 minutes on each side until they turn pink and are cooked through.
- Keep Shrimp Warm: Remove cooked shrimp from the pan and place them on a plate. Cover with foil to retain warmth while assembling the bites.
- Prepare Tortilla Scoops: Arrange the tortilla scoops on a serving tray. Place a small amount of finely chopped cabbage into each scoop to add crunch and freshness.
- Add Cilantro Cream Sauce: Spoon approximately 1 teaspoon of the cilantro cream sauce into each tortilla scoop over the cabbage layer.
- Assemble with Shrimp and Avocado: Place one cooked shrimp along with a couple of diced avocado pieces into each scoop on top of the sauce and cabbage.
- Garnish: Drizzle a small amount of Sriracha sauce over the shrimp if desired for a spicy kick, and garnish with fresh cilantro leaves.
- Serve: Serve the shrimp taco bites immediately to enjoy their best flavor and texture.
- Make Cilantro Cream Sauce: In a small mixing bowl, combine sour cream, finely chopped cilantro, lime juice, salt, and pepper. Stir well to blend the flavors.
- Refrigerate Sauce: Cover the sauce with plastic wrap and refrigerate until ready to serve, allowing the flavors to meld.
Notes
- You can use pre-flavored taco seasoning or make your own blend for a custom taste.
- Use small shrimp for perfect bite-sized pieces; medium shrimp may overpower the tortilla scoops.
- For a milder dish, omit the Sriracha or substitute with a milder hot sauce.
- These bites are best served immediately to maintain crispiness of the tortilla scoops.
- To make ahead, prepare the cilantro cream sauce and chop cabbage in advance; assemble just before serving.
