Ingredients

Noodles and Shrimp

  • ~6 oz thin egg noodles or Canton noodles (dried)
  • 6 oz shrimp, peeled and deveined

Vegetables and Aromatics

  • 1-2 tbsp minced garlic
  • 1/4 cup sliced white onions
  • 1/2 cup chopped green onions (~1-inch long)
  • 1 cup shredded cabbage
  • 1 cup shredded carrots

Oils

  • 1-2 tbsp vegetable oil, divided

Stir Fry Sauce

  • 2 tbsp oyster sauce (flavored)
  • 1 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 1/2 tbsp rice cooking wine
  • 1-2 dashes white or black pepper
  • 1 tsp sugar
  • 1 tsp dark soy sauce (optional)


Instructions

  1. Prepare Noodles: Fill a medium pot with water and bring to a boil. Add the dried egg noodles and cook for 3 minutes or according to package instructions. Drain well and toss the noodles with a little vegetable oil to prevent sticking if they will sit before cooking.
  2. Mix Stir Fry Sauce: In a small bowl, whisk together oyster sauce, soy sauce, sesame oil, rice cooking wine, pepper, sugar, and optional dark soy sauce until combined.
  3. Prep Ingredients: Prepare shrimp by patting dry if previously frozen. Mince garlic, slice white onions, chop green onions, shred cabbage, and shred carrots as indicated.
  4. Cook Shrimp: Heat wok on high heat and add about 1/2 tablespoon vegetable oil. Once hot, add shrimp and stir-fry for a few minutes until cooked through and opaque. Remove shrimp and set aside.
  5. Sauté Aromatics: Add another 1 tablespoon vegetable oil to the hot wok. Add minced garlic and white onions and stir-fry quickly for about 30 seconds, careful not to burn the garlic.
  6. Cook Noodles with Sauce: Add the prepared noodles to the wok and stir continuously for about 1 minute. Pour in the stir fry sauce and continue to toss and stir for another minute to evenly coat the noodles with the sauce.
  7. Add Vegetables and Shrimp: Return cooked shrimp to the wok, then add green onions, shredded cabbage, and carrots. Stir fry everything together for around 30 seconds until heated through, then promptly remove from heat.
  8. Serve: Plate the stir fried noodles with shrimp and vegetables immediately for best texture and flavor. Enjoy!
