A flavorful Shrimp Scampi with tender artichoke hearts in a zesty garlic, white wine, and lemon sauce, perfect for a quick and elegant dinner.
Ingredients
Sauce and Veggies
- 1/4 cup extra-virgin olive oil
- 1 large shallot (thinly sliced)
- 6 cloves garlic (minced)
- 3/4 cup dry white wine
- 2 tablespoons fresh lemon juice
- 1 teaspoon crushed red pepper flakes (or to taste and tolerance)
- 1/2 teaspoon salt (or to taste)
- 1 bag (12-ounce) frozen artichoke hearts (thawed and patted dry)
Shrimp and Finishing
- 1 pound large shrimp (16-20 count, peeled and deveined)
- 6 tablespoons butter (salted or unsalted, cut into six even pieces)
- Freshly ground black pepper (to taste)
- 2 tablespoons chopped fresh Italian parsley
- Lemon wedges (for serving)
Instructions
- Heat oil: Heat olive oil in a large skillet or sauté pan over medium-high heat to prepare for sautéing aromatics.
- Sauté shallots: Add the thinly sliced shallot to the hot oil, reduce heat to medium-low, and cook for 3-4 minutes. Stir often to soften shallots without burning.
- Add garlic: Stir in the minced garlic briefly for 5-10 seconds to release its aroma without browning.
- Deglaze and season: Pour in the dry white wine, fresh lemon juice, crushed red pepper flakes, and salt. Bring the mixture to a boil, cook for 1 minute to blend flavors, then reduce heat to medium.
- Heat artichokes: Add the thawed and patted dry artichoke hearts, stirring them to heat through for approximately 30 seconds.
- Cook shrimp: Add the peeled and deveined shrimp to the pan, cooking gently and turning once until just cooked through, usually 2-3 minutes per side depending on size.
- Add butter: Stir in six pieces of butter, allowing it to melt completely and enrich the sauce.
- Season and garnish: Adjust seasoning with additional salt and freshly ground black pepper to taste, then sprinkle chopped fresh Italian parsley over the dish.
- Serve: Plate the shrimp scampi and artichokes, serving immediately with lemon wedges on the side for squeezing over.
Notes
- Use fresh lemon juice for the best flavor impact.
- Adjust crushed red pepper flakes depending on your spice tolerance.
- Ensure shrimp are peeled and deveined for a clean, tender bite.
- White wine adds acidity and depth, substitute with chicken broth for a non-alcoholic version.
- Serve over pasta, rice, or with crusty bread to soak up the sauce.
