A refreshing and zesty Shrimp Ceviche recipe that combines tender cooked shrimp marinated in fresh lime and lemon juice with diced tomatoes, avocado, jalapeño, and cilantro. Ingredients
Shrimp and Marinade
- 1 lb raw shrimp (peeled and deveined)
- 1/4 cup fresh lime juice (about 2-3 limes)
- 1/4 cup fresh lemon juice (about 2 lemons)
Vegetables and Garnishes
- 1/2 small red onion (finely diced)
- 3 roma tomatoes (diced)
- 1 medium avocado (diced)
- 1 jalapeno (seeds removed and minced)
- ½ cup fresh cilantro (chopped)
- 1 cup Clamato juice
- Salt and pepper (to taste)
Instructions
- Cook the Shrimp: Bring a medium pot of water to a rolling boil. Add the raw shrimp and cook for 1-2 minutes until the shrimp turn opaque and are cooked through. Immediately plunge the shrimp into a bowl of ice water to stop the cooking process, then drain thoroughly.
- Marinate the Shrimp: If the shrimp pieces are large, cut them into smaller, bite-sized pieces. Transfer the shrimp to a glass bowl, then add the fresh lime juice and lemon juice. Cover the bowl and refrigerate for at least 15 minutes to allow the shrimp to marinate and absorb the citrus flavors.
- Combine with Vegetables and Season: After marinating, add the finely diced red onion, diced roma tomatoes, diced avocado, minced jalapeno, chopped cilantro, and Clamato juice to the shrimp. Stir gently to combine all ingredients thoroughly. Season with salt and pepper to taste. Serve chilled, ideally with tortilla chips for scooping.
