  • ¼ cup water


Instructions

  1. Sauté Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell peppers, sautéing until they are softened and fragrant, about 8 to 10 minutes.
  2. Cook Chicken with Spices: Add the shredded chicken to the skillet along with chili powder, cumin, smoked paprika, salt, garlic powder, onion powder, and ¼ cup of water. Stir to combine and cook until the mixture thickens slightly, about 3 to 4 minutes. Then remove from heat and transfer to a bowl.
  3. Prepare Quesadillas: In the same skillet, heat another ½ teaspoon of olive oil over medium heat. Place one flour tortilla in the skillet. Layer evenly with shredded cheese, the chicken and vegetable mixture, then more cheese on top. Fold the tortilla in half to enclose the filling.
  4. Cook Until Golden: Cook each quesadilla for about 3 to 4 minutes per side, or until the tortilla is golden brown and the cheese is melted. Repeat this step with the remaining tortillas and filling.
  5. Serve: Slice the cooked quesadillas into wedges and serve warm. Pair with your favorite dips such as sour cream, guacamole, or salsa for added flavor.
