Description

Sheet Pan Thai Glazed Salmon with Vegetables is a flavorful and easy all-in-one meal featuring tender salmon fillets glazed with a sweet and tangy Thai sauce, accompanied by crisp, colorful vegetables. This dish combines vibrant Asian flavors with a convenient sheet pan cooking method for a hassle-free, nutritious dinner perfect for busy weeknights.

Ingredients

Salmon and Vegetables

  • 4 salmon fillets
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • 1 chopped yellow bell pepper
  • 1 chopped onion
  • 1 cup snow peas
  • 2 thinly sliced carrots

Thai Glaze Sauce

  • ½ cup Thai sweet chili sauce
  • ¼ cup soy sauce
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon lime juice
  • ½ teaspoon red pepper flakes

Garnish

  • Chopped cilantro
  • Lime slices

Instructions

  1. Prepare the Oven and Baking Sheet: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly spray a baking sheet with non-stick cooking spray to prevent sticking.
  2. Arrange Salmon and Vegetables: Place the 4 salmon fillets skin side down on the prepared baking sheet. Surround the salmon evenly with the chopped red, green, and yellow bell peppers, chopped onion, snow peas, and thinly sliced carrots.
  3. Make the Thai Glaze: In a small bowl, whisk together the Thai sweet chili sauce, soy sauce, grated fresh ginger, lime juice, and red pepper flakes until well combined. Reserve ¼ cup of this marinade for later use.
  4. Apply the Glaze and Bake: Drizzle the majority of the glaze over the salmon fillets and surrounding vegetables. Cover the baking sheet loosely with aluminum foil and bake in the preheated oven for 15 minutes to cook the salmon and vegetables through.
  5. Broil for Finish: Remove the foil and switch the oven to broil. Broil the salmon and vegetables for 5-7 minutes or until the tops start to blacken slightly, giving the glaze a caramelized finish.
  6. Final Touches and Serve: Remove the baking sheet from the oven and brush the reserved ¼ cup marinade over the salmon fillets for an extra burst of flavor. Garnish with fresh chopped cilantro and lime slices as desired before serving.

Notes

  • Ensure salmon fillets are of similar size for even cooking.
  • You can substitute snow peas with snap peas or green beans if preferred.
  • If you prefer less spice, reduce or omit the red pepper flakes.
  • For a gluten-free option, use tamari or gluten-free soy sauce.
  • Save any leftover glaze for additional dipping sauce if desired.
