Description

A hearty and flavorful Sheet Pan Sweet Potato Breakfast Hash featuring crispy sweet and Yukon gold potatoes, caramelized red onions, savory bacon, and baked eggs all cooked on one pan for an easy and satisfying breakfast.

Ingredients

Vegetables

  • 2 sweet potatoes, peeled and cubed
  • 2 Yukon gold potatoes, cubed
  • 1/2 red onion, diced
  • 1 garlic clove, minced

Other

  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 slices bacon, chopped
  • 4 to 6 large eggs
  • Green onions for topping
  • Hot sauce for topping

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to ensure it reaches the perfect temperature for roasting the vegetables and bacon.
  2. Prepare and roast the hash: On a large baking sheet, combine the cubed sweet potatoes, Yukon gold potatoes, diced red onion, and minced garlic. Drizzle with olive oil, then sprinkle salt and pepper over everything. Toss thoroughly to coat. Scatter the chopped bacon evenly across the sheet. Place the baking sheet in the oven and roast for 25 to 30 minutes, tossing once midway to promote even cooking. The bacon should become crisp and the potatoes tender and golden. If needed, cook a bit longer until desired texture is reached.
  3. Add and bake the eggs: Once the bacon and potatoes are cooked, carefully create small spaces on the baking sheet and crack the eggs directly over the hash. Return the pan to the oven and bake for 5 to 12 minutes depending on how runny or firm you prefer your egg yolks.
  4. Serve: Remove the sheet pan from the oven, then immediately garnish the breakfast hash with sliced green onions and a drizzle of hot sauce as desired. Serve warm and enjoy!

Notes

  • You can adjust the number of eggs to suit your preference or serving size.
  • Feel free to swap bacon with turkey bacon or a vegetarian substitute for a different dietary option.
  • Green onions and hot sauce add fresh and spicy flavor but can be omitted if preferred.
  • Be sure to toss the veggies halfway through roasting to ensure they cook evenly and brown nicely.
  • Oven times may vary slightly, so check potatoes with a fork to confirm tenderness before adding eggs.
