Ingredients

Pork Tenderloin and Marinade

  • 1 ½-2 pounds pork tenderloin
  • ⅓ cup brown sugar

  • 2 tablespoons balsamic vinegar
  • ⅛ teaspoon crushed red pepper flakes
  • ¼ teaspoon smoked paprika (optional)

Potatoes

  • 1 ½ – 2 pounds baby red and/or gold potatoes (halved)
  • 3 tablespoons oil (olive or vegetable oil)
  • Salt and pepper to taste
  • ½ teaspoon Italian blend herbs
  • ½ teaspoon garlic powder
  • ⅓ cup grated parmesan cheese


Instructions

  1. Preheat and prepare sheet pan. Preheat oven to 425°F (220°C) and grease a sheet pan. Line one half with foil, folding the sides up about 2 inches to create a tray that will contain the pork juices. Place the pork tenderloin in the center of the foil tray.
  2. Marinate the pork. Pat the pork tenderloin dry with a paper towel. In a small bowl, whisk together brown sugar, garlic, soy sauce, balsamic vinegar, crushed red pepper flakes, and smoked paprika. Pour the mixture over the pork, turning it a couple of times to coat all sides evenly.
  3. Prepare the potatoes. Arrange the halved baby potatoes on the non-foil half of the sheet pan. Drizzle with oil, then toss to coat. Season with salt, pepper, Italian blend herbs, garlic powder, and sprinkle with grated parmesan cheese.
  4. Bake the pork and potatoes. Place the sheet pan in the preheated oven and bake for 40-45 minutes. Every 5-10 minutes, use tongs to turn the pork over in the marinade to ensure it is evenly coated and flavorful.
  5. Broil for browning. For the last 2-3 minutes, switch the oven setting to BROIL to brown the pork and potatoes. Watch carefully to prevent burning.
  6. Rest and serve. Remove the sheet pan from the oven and let the pork tenderloin rest for 5 minutes. Slice into 1-inch sections and serve with the roasted potatoes.
