Description
This Sheet Pan BBQ Chicken recipe is a simple and flavorful one-pan meal featuring tender boneless chicken breasts coated in tangy barbecue sauce, roasted alongside seasoned baby potatoes, green beans, and corn. Perfect for a quick and easy dinner, everything cooks together on a single baking sheet for minimal cleanup.
Ingredients
Chicken
- 4 boneless skinless chicken breasts (about 6 ounces each)
- ¾ cup barbecue sauce
Vegetables
- 1½ pounds baby potatoes, halved
- 12 ounces green beans, trimmed
- 1 (15 ounce) can corn, drained (or 1½ cups frozen corn, thawed)
Seasonings & Oils
- 1½ tablespoons olive oil, divided
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon salt (or to taste)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
- Prepare Chicken: In a medium bowl, toss the boneless skinless chicken breasts with ¾ cup of barbecue sauce until evenly coated.
- Season Potatoes and Arrange: Place the halved baby potatoes on the prepared baking sheet. Drizzle with 1 tablespoon olive oil, sprinkle with Cajun seasoning, garlic powder, and black pepper. Spread the potatoes evenly, then nestle the barbecue-coated chicken breasts in between the potatoes on the pan. Bake for 15 minutes.
- Toss Vegetables: While the potatoes roast, combine green beans and drained or thawed corn in a bowl. Drizzle with the remaining ½ tablespoon olive oil and season with salt. Toss to coat evenly.
- Add Vegetables and Continue Baking: Remove the baking sheet from the oven and add the seasoned green beans and corn around the chicken and potatoes. Return the sheet to the oven and bake for an additional 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
- Optional Broil: For a slightly charred finish, broil the sheet pan for 2 to 3 minutes until the chicken has light browned spots.
- Rest and Serve: Remove from the oven and let the chicken rest for 5 minutes before serving to allow juices to redistribute. Serve warm and enjoy!
Notes
- Use a meat thermometer to ensure chicken is cooked to a safe internal temperature of 165°F.
- If using frozen corn, thaw completely before adding to the pan.
- Adjust the Cajun seasoning amount to your heat preference or substitute with smoked paprika for a milder flavor.
- Broiling is optional but gives a nice caramelized finish to the BBQ sauce.
- Leftovers can be stored in airtight containers refrigerated for up to 3 days.
