Description

A fresh and vibrant Shaved Brussels Sprouts Salad featuring thinly sliced Brussels sprouts tossed with a tangy lemon shallot dressing, sweet Medjool dates, crunchy sliced almonds, and savory shaved Romano cheese. This light and nutritious salad is perfect for a quick and elegant side dish or a healthy appetizer.

Ingredients

Dressing

  • 1/2 cup fresh lemon juice (plus more to taste)
  • 1 medium shallot, finely chopped (approximately 1/4 cup)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/2 cup extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste

Salad

  • 1 1/2 pounds Brussels sprouts, stem ends trimmed, thinly sliced or shaved
  • 6 Medjool dates, pitted and chopped
  • 1/2 cup sliced almonds (plus more for garnish)
  • 1/2 cup shaved Romano cheese (plus more for garnish)

Instructions

  1. Soften Shallots: Combine the lemon juice and finely chopped shallots in a small bowl. Allow the mixture to stand for 5-10 minutes to soften the shallots and mellow their flavor. Meanwhile, prepare the Brussels sprouts by trimming and thinly slicing them.
  2. Prepare Dressing: Whisk the Dijon mustard and honey into the lemon and shallot mixture until fully combined. Slowly drizzle in the extra-virgin olive oil while whisking continuously to emulsify the dressing. Season generously with salt and freshly ground black pepper to taste.
  3. Toss Salad Ingredients: In a large mixing bowl, add the shaved Brussels sprouts, chopped Medjool dates, sliced almonds, and shaved Romano cheese. Toss gently to combine all ingredients evenly.
  4. Add Dressing and Toss: Drizzle the prepared dressing over the Brussels sprouts mixture. Toss thoroughly to coat all the components with the dressing. Adjust seasoning by adding more salt, black pepper, or an extra squeeze of lemon juice according to your taste preference.
  5. Serve and Garnish: Transfer the tossed salad to a serving bowl or platter. Garnish with additional shaved Romano cheese and sliced almonds for an attractive finish and extra texture.

Notes

  • For best results, use fresh and firm Brussels sprouts to ensure a crisp texture.
  • Medjool dates add natural sweetness, but you can substitute with dried cranberries or raisins if preferred.
  • The salad can be prepared a few hours ahead; keep refrigerated and dress just before serving to maintain freshness.
  • For a vegan version, substitute Romano cheese with vegan cheese or omit entirely.
  • Adjust the lemon juice and honey quantities to balance acidity and sweetness based on personal preference.
