Description

This Easy Shamrock Shake Pie is a no-bake, creamy, and minty dessert inspired by the classic St. Patrick’s Day shamrock shake. It features a crunchy graham cracker crust topped with a light, fluffy mint and vanilla pudding filling. With just 15 minutes of prep and a few hours of freezing, this festive pie makes a perfect crowd-pleasing treat for celebrating St. Patrick’s Day or any time you want a refreshing mint dessert.

Ingredients

Crust

  • 12 full sheets graham crackers
  • 2 tbsp brown sugar
  • 0.5 cup (1 stick) butter, melted

Filling

  • 2.5 cups cold milk
  • 0.25 tsp green food coloring (gel preferred)
  • 2 tsp mint extract
  • 1 box (5.1 oz) instant vanilla pudding mix
  • 1 container (8 oz) whipped topping, thawed

Instructions

  1. Prepare the crust: In a food processor, pulse the graham crackers and brown sugar until finely ground. With the processor running, slowly drizzle in the melted butter until the mixture resembles wet sand. Press this mixture firmly and evenly into a greased 9-inch pie dish. Freeze the crust for 15-20 minutes to set.
  2. Make the filling: In a large bowl, whisk together the cold milk, green food coloring, and mint extract until the color is evenly combined and you have a light green mixture. Add the instant vanilla pudding mix and whisk vigorously for 2-3 minutes until the pudding starts to thicken. Let the mixture stand for 5 minutes to fully thicken.
  3. Fold in whipped topping: Gently fold the thawed whipped topping into the thickened pudding mixture using a spatula. Fold until smooth and no white streaks remain to maintain a light, airy texture.
  4. Assemble the pie: Spoon the creamy green filling over the chilled crust and smooth the top with a spatula. Cover loosely with plastic wrap and freeze for at least 6 hours or overnight until completely firm.
  5. Serve: Before slicing, let the pie sit at room temperature for 5-10 minutes to soften slightly for cleaner slices. Garnish as desired with whipped cream, cherries, or chocolate shavings. Serve cold and enjoy!

Notes

  • Use gel food coloring for the brightest green color and better texture.
  • Ensure the milk is very cold before mixing with the pudding for proper thickening.
  • Fold the whipped topping gently to keep the filling light and airy.
  • For cleanest slices, let the pie thaw briefly at room temperature and use a hot knife.
  • You can make this pie up to one week in advance; store tightly wrapped in the freezer.
