Description

Sawdust Pie is a classic Southern dessert featuring a crunchy, sweet filling made from egg whites, sugar, graham cracker crumbs, pecans, and shredded coconut baked in a flaky pie crust. This luscious pie is served warm and topped with sliced ripe bananas and whipped cream, offering a delightful combination of textures and flavors in every bite.

Ingredients

Filling

  • 7 egg whites, room temperature
  • 1 1/2 cups sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups chopped pecans
  • 1 1/2 cups sweetened shredded coconut

Crust and Garnish

  • 1 frozen deep-dish pie crust (9 inches)
  • Sliced ripe banana, for garnish
  • Whipped cream, for garnish

Instructions

  1. Make the filling: In a large bowl, combine the room temperature egg whites, sugar, graham cracker crumbs, chopped pecans, and shredded coconut. Stir thoroughly until all ingredients are evenly blended into a smooth filling.
  2. Prepare the oven and pie crust: Preheat your oven to 325°F (163°C). Place the frozen deep-dish pie crust onto a baking sheet to catch any drips during baking.
  3. Fill the crust: Pour the prepared filling into the pie crust, smoothing the top evenly with a spatula to ensure a uniform surface.
  4. Bake the pie: Place the pie on the baking sheet in the preheated oven and bake for 35 to 40 minutes, or until the top appears glossy and the edges are set. The center should still jiggle slightly when gently shaken to avoid overbaking and dry texture.
  5. Cool the pie: Remove the pie from the oven and allow it to cool for at least 30 minutes at room temperature, giving the filling adequate time to set for cleaner slicing.
  6. Serve: Slice the pie and serve warm, garnished with sliced ripe bananas and whisked cream for an added touch of sweetness and creaminess.

Notes

  • Allow egg whites to come to room temperature before mixing to ensure a smooth and even filling.
  • Use a baking sheet to catch any pie drips and facilitate easy cleanup.
  • Do not overbake; the filling should maintain a slight jiggle to stay moist and tender.
  • Cool the pie properly before slicing to achieve neat slices.
  • For best flavor, garnish with fresh ripe bananas and whipped cream just before serving.
