A hearty and comforting Savoury Mince Cobbler featuring a rich minced beef filling simmered with herbs and tomato puree, topped with a golden self-raising flour and cheddar cheese cobbler crust baked until perfectly risen and golden.
Ingredients
Savoury Mince Filling
- 2 tsp olive oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 500 g minced beef
- 2 tbsp plain flour
- 300 ml beef stock
- 1 tbsp tomato puree
- 1 tsp dried mixed herbs
- 1 tsp Worcestershire sauce (optional)
Cobbler Topping
- 175 g self-raising flour
- 50 g butter, cut into cubes
- 50 g cheddar cheese, finely grated (plus extra for sprinkling)
- 5 tbsp milk
Instructions
- Prepare the Mince Filling: Heat 2 teaspoons of olive oil in a frying pan over medium heat. Add the chopped onion and cook gently until softened and starting to brown. Add the chopped garlic and cook for an additional minute or two to release the aromas.
- Brown the Mince: Add the minced beef to the pan and cook over medium-high heat, breaking it up with the side of a spoon, until the meat is browned and cooked through evenly.
- Add Flour and Liquids: Sprinkle the plain flour over the browned mince and stir well to combine. Gradually pour in the beef stock while stirring to avoid lumps and bring the mixture to a simmer.
- Season and Simmer: Stir in the tomato puree, dried mixed herbs, and Worcestershire sauce (if using). Continue to cook gently, stirring occasionally, while you prepare the cobbler topping.
- Make the Cobbler Dough: Preheat your oven to 200℃ (180℃ fan)/400°F/gas mark 6. In a mixing bowl, place the self-raising flour and cubed butter. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs.
- Add Cheese and Milk: Stir in the finely grated cheddar cheese, keeping a little aside for topping. Gradually add the milk, about 5 tablespoons, stirring until the mixture just comes together as a soft dough.
- Shape the Cobbler Topping: Turn the dough out onto a lightly floured surface. Form it into a ball and flatten it gently with your hand into a circle about 2 cm (1 inch) thick. Cut the circle into 8 wedges.
- Assemble and Bake: Pour the mince filling into an ovenproof dish, then arrange the cobbler dough wedges on top. Sprinkle with the reserved cheddar cheese to finish. Bake in the preheated oven for 20 minutes or until the cobblers have risen and turned golden brown.
Notes
- You can substitute the minced beef for minced lamb or turkey for variation.
- Worcestershire sauce adds extra depth but can be omitted for a milder flavor.
- If preferred, use reduced-fat cheddar and less butter to lower the fat content.
- Ensure the cobbler dough isn’t overworked for a tender crumb topping.
- Serve with steamed vegetables or a fresh salad for a complete meal.
