Instructions
- Shred the cabbage: Remove the core from the quartered cabbage by cutting at an angle where the stems and leaves meet. Then slice the cabbage wedges thinly or shred them using a food processor with a slicing blade or a mandoline. Pat the cabbage dry if it seems wet to avoid excess moisture during cooking.
- Sauté the cabbage: Heat a large cast iron skillet over medium-high heat and add 3 tablespoons of extra virgin olive oil. When the oil shimmers, add the shredded cabbage, sliced onions, and minced garlic. Although the pan will look crowded, the ingredients will cook down quickly.
- Season the cabbage: Sprinkle in a good pinch of kosher salt, the crushed red pepper flakes (or Aleppo pepper), and ground coriander. Continue cooking the cabbage, tossing occasionally, until it softens completely and begins to caramelize, developing rich flavor and color.
- Finish and serve: Remove the skillet from the heat and immediately drizzle with fresh lime juice to brighten the flavors. Optionally, drizzle with creamy feta dressing or tahini sauce before serving for added richness and tang.
