Description
A flavorful and healthy sautéed cabbage recipe featuring the delicate tastes of fennel and leeks, perfect for a low histamine diet. This dish combines caramelized leeks and tender fennel with crunchy white and red cabbage for a light, vibrant side that retains a pleasant bite and can be seasoned with apple cider vinegar for an extra tang.
Ingredients
Vegetables
- 1 small fennel bulb, finely sliced (plus some green leaves from the stem, optional)
- 1 thumb-sized piece of ginger, grated
- 1 leek, well washed, halved, and finely sliced
- 1 very small white cabbage (or half a larger one), roughly chopped
- 1 very small red cabbage (or half a larger one), roughly chopped
Other
- Extra virgin olive oil, enough to well cover the pan
- Salt, to taste
- Pepper, to taste (optional)
- Apple cider vinegar, a sprinkle (optional)
Instructions
- Heat the oil: Pour enough extra virgin olive oil into a large pan with a lid so it well covers the base. Warm it over medium heat until hot but not smoking.
- Saute the leeks: Add the sliced leek sections to the hot oil. Saute on medium heat for about 5-10 minutes, stirring occasionally. Cook until leeks develop slight caramelization and soften but not brown excessively.
- Add fennel and ginger: Stir in the finely sliced fennel bulb and grated ginger. Continue cooking for another 5 minutes, stirring regularly to blend flavors and avoid sticking.
- Add cabbage and season: Mix in the roughly chopped white and red cabbage. Season with salt to taste and stir well to combine all ingredients evenly in the pan.
- Cover and cook: Put the lid on the pan and cook on medium-low heat. Check every few minutes to stir and ensure the vegetables don’t stick to the pan. If needed, add a few tablespoons of water to maintain moisture. Continue cooking until cabbage is tender but still retains some crunch according to your preference.
- Final seasoning: Taste and adjust salt as needed. Optionally add pepper and a splash of apple cider vinegar for brightness. Garnish with the reserved fresh green fennel leaves if desired. Serve warm.
Notes
- Use a large pan with a lid to help steam and soften the cabbage without drying out the vegetables.
- Maintaining some bite in the cabbage gives a better texture contrast with the softer leeks and fennel.
- Avoid overcooking to prevent mushiness and preserve nutrients.
- This recipe is suitable for a low histamine diet due to the fresh ingredients and gentle cooking method.
- Apple cider vinegar is optional and adds a subtle tang; omit if strict low histamine is required.
