Description

A simple and flavorful sautéed asparagus and mushrooms recipe that brings together tender-crisp asparagus spears and juicy mushrooms cooked with garlic and fresh thyme. Ready in just 12 minutes, this side dish is perfect for a quick, healthy addition to any meal.

Ingredients

Vegetables

  • 1 bunch asparagus
  • 4 ounces fresh mushrooms (crimini or white button mushrooms)
  • 1 clove garlic (minced)

Seasonings and Oil

  • 1/2 tbsp olive oil (classic)
  • 1/4 tsp sea salt
  • generous pinch thyme leaves
  • black pepper (to taste)

Instructions

  1. Prepare Asparagus: Snap or cut off the woody ends of the asparagus spears, then cut the trimmed spears on a diagonal to ensure better cooking and a pleasant texture. You may also hand snap them if preferred.
  2. Heat Skillet: Preheat a large skillet over medium-high heat. Once hot, add the olive oil to the skillet.
  3. Start Sautéing Asparagus: Add the asparagus pieces, minced garlic, fresh thyme, and sea salt to the skillet. Sauté while you prepare the mushrooms.
  4. Prepare Mushrooms: Brush off any debris from the mushrooms and slice them into bite-sized pieces.
  5. Add Mushrooms to Skillet: After the asparagus has started to become tender but is not fully cooked, reduce the heat to medium and add the sliced mushrooms to the skillet.
  6. Finish Cooking: Cook everything together for a couple more minutes, stirring occasionally, until the mushrooms are cooked through and the asparagus is tender-crisp.
  7. Season and Serve: Season the dish with additional salt and black pepper to taste before serving.

Notes

  • Cutting the asparagus at an angle helps them cook evenly and improves texture.
  • Use fresh thyme leaves for a fragrant herb flavor; dried thyme can be substituted but reduce quantity.
  • Do not overcook the mushrooms; they should remain tender and juicy.
  • Adjust seasoning according to taste, especially if using salted butter or other salt sources in the meal.
  • This dish pairs well with grilled meats, pasta, or as a healthy vegetarian side.
