Ingredients

Vegetables

  • 2-1/2 lbs. mixture of white and orange (yams) sweet potatoes, peeled and cubed into bite-sized pieces
  • 1/2 large yellow onion, finely diced
  • 1 large green bell pepper, finely chopped
  • 1 large red bell pepper, finely chopped

Meat

  • 1 lb. fresh Italian ground sausage (mild or spicy)

Spices & Herbs

  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 1/2 tsp. table salt
  • 1 tsp. minced fresh parsley

Other

  • 1-2 teaspoons oil (any) (optional, for sautéing if needed)


Instructions

  1. Prepare Sweet Potatoes: Bring a large pot of salted water to a boil. Add the cubed sweet potatoes and boil for 4-5 minutes or until they are almost tender but still hold their shape. Drain and set aside to prevent mushiness.
  2. Cook Sausage: In a large nonstick skillet over medium-high heat, brown the Italian ground sausage until fully cooked through. Remove the sausage from the skillet and place it on a paper towel-lined plate to drain excess fat.
  3. Sauté Onions: Check the skillet for residual fat; if insufficient, add 1 to 2 teaspoons of oil. Add the finely diced yellow onion and sauté over medium heat for about 5 minutes until softened and translucent.
  4. Add Bell Peppers: Add the chopped green and red bell peppers to the skillet and continue sautéing for another 5 minutes until they are tender but still vibrant.
  5. Season and Combine: Stir in ground cumin, smoked paprika, and salt into the sautéed vegetables. Gently return the cooked sausage and boiled sweet potatoes to the skillet, mixing carefully to warm everything through without breaking up the sweet potatoes.
  6. Serve: Transfer the sausage and sweet potato hash to a serving dish and sprinkle with minced fresh parsley for a fresh, vibrant finish.

  • Do not overboil the sweet potatoes to ensure they maintain their texture in the hash.
