Ingredients
Filling Ingredients
- 4 cups broth
- 12 white pearl onions, peeled
- 1 ½ cups diced Yukon Gold potatoes
- 1 cup thickly sliced carrots
- ½ cup frozen peas
- 14 ounces sausage, sliced
Sauce Ingredients
- 3 tablespoons unsalted butter
- ¼ cup all-purpose flour
- ½ cup cream
- Salt and pepper to taste
Pastry and Finishing
- 2 sheets puff pastry dough, defrosted
- Egg white, lightly beaten (for brushing)
Instructions
- Defrost Puff Pastry: Follow the package directions to properly defrost the puff pastry sheets before using.
- Cook Vegetables and Sausage: Heat the broth in a large pot over medium heat. Once hot, add the peeled pearl onions and cook for 2 minutes. Add diced Yukon Gold potatoes, thickly sliced carrots, and sliced sausage, cooking for an additional 10 minutes. Finally, stir in the frozen peas and remove the pot from heat.
- Transfer Filling: Using a slotted spoon, transfer the cooked vegetables and sausage into ovenproof soup ramekins, reserving the broth in the pot.
- Make the Sauce: In a medium pan, melt the unsalted butter. Add the flour and cook for about 3 minutes until the mixture starts to brown slightly. Gradually whisk in the reserved broth and cook until the sauce thickens, approximately 2-3 minutes. Stir in the cream and cook for another minute until heated through. Season with salt and pepper to taste. Pour the sauce over the filling in each ramekin.
- Prepare Puff Pastry Covers: Roll out the puff pastry and cut pieces large enough to fit over each ramekin. Place the pastry on top, crimping the edges to seal. Cut a vent in the center using a sharp knife. Brush the puff pastry lightly with beaten egg white to achieve a golden finish.
- Bake Pot Pies and Pastry Straws: Place the ramekins on a large cookie sheet to catch any drips. If you have extra puff pastry, cut it into strips to bake separately as puff pastry straws. Bake pot pies at 425°F for 10 minutes. Without removing from the oven, reduce heat to 350°F and continue baking for 20-25 minutes until the pastry is golden and cooked through.
- Serve: Remove the pot pies from the oven and serve hot, enjoying the comforting blend of flavors.
Notes
- You can prepare this recipe a day ahead by assembling the pot pies and refrigerating them before baking.
- For a vegetarian version, substitute the sausage with sautéed mushrooms or plant-based sausage alternatives.
- Ensure to cut a vent in the puff pastry to prevent steam buildup and sogginess.
- Serve with a light side salad or steamed greens for a well-rounded meal.
- If preferred, homemade broth can be used instead of store-bought broth for enhanced flavor.
