Ingredients
Sushi Rice
- 2 cups Water
- 1 ½ cups Sushi or Calrose Rice
- ¼ cup Rice Vinegar
- ¼ cup Maple Syrup
- 1 Tablespoon Neutral Oil (like avocado or vegetable oil)
Spicy Mayo
- 2 ½ Tablespoons Kewpie Mayo
- 1 ½ Tablespoons Sriracha
Bowl Toppings
- 4 Prepared Salmon Fillets
- 1 Mango (diced)
- 2 Avocados (sliced)
- 4-5 Mini Cucumbers (thinly sliced)
- 1 Red Bell Pepper (finely diced)
- 2 Carrots (finely diced)
- 2 Spring Onions (diced)
- Black Sesame Seeds (for topping, optional)
- Nori (Seaweed Sheets, for serving, optional)
Instructions
- Make the Sushi Rice: In a large saucepan, combine the water and sushi rice. Cover with a tight fitting lid and bring to a boil. Once boiling, reduce the heat to medium-low and simmer for 10-12 minutes until all the water is absorbed and the rice is tender.
- Season the Rice: In a small bowl, mix the rice vinegar, maple syrup, and neutral oil. Pour this mixture over the hot rice, stir gently to combine, then cover and let the rice sit for 10-15 minutes to absorb the flavors.
- Prepare the Spicy Mayo: In a small bowl, combine the Kewpie mayo with sriracha sauce. Mix thoroughly and set aside for drizzling later.
- Assemble the Bowls: Spoon ½ to ¾ cup of the seasoned sushi rice into each shallow bowl. Place one cooked salmon fillet atop the rice, then layer on diced mango, sliced avocado, thinly sliced mini cucumbers, finely diced red bell pepper and carrots, and chopped spring onions.
- Final Touches: Sprinkle black sesame seeds over the bowls for extra texture and flavor, add nori sheets on the side if desired, and drizzle generously with the prepared spicy mayo. Serve immediately and enjoy a fresh, flavorful sushi experience.
Notes
- Use prepared salmon fillets—cooked by your preferred method such as baking or pan-searing.
- Adjust the amount of sriracha in the spicy mayo to suit your spice preference.
- Letting the rice rest after seasoning is important for optimal flavor and texture.
- For authentic sushi rice, rinse the rice thoroughly before cooking to remove excess starch.
- Add other toppings like edamame or pickled ginger if desired.
