Ingredients
For the Salmon Burgers
- 2 (6 ounce) cans salmon (wild planet recommended)
- ½ cup panko breadcrumbs
- 1 egg, lightly beaten
- 1 clove garlic, minced
- 2 scallions, white part finely chopped (about 1 Tablespoon)
- 2 teaspoons Dijon mustard
- 2 Tablespoons full fat Greek yogurt
- 1 Tablespoon fresh lemon juice
- 1 Tablespoon chopped fresh parsley
- ¼ teaspoon fine sea salt
- ¼ teaspoon ground black pepper
For Serving
- Lettuce leaves
- 4 buns
- Sliced onion
- Sliced tomato
For the Herb Sauce
- ¼ cup full fat Greek yogurt
- ¼ cup mayonnaise (avocado mayo recommended)
- 1 Tablespoon fresh lemon juice
- 1 Tablespoon fresh dill, chopped
- 1 Tablespoon fresh parsley or chives, chopped
- ½ Tablespoon capers, chopped
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper (to taste)
Instructions
- Make the herb sauce: In a small bowl, combine Greek yogurt, mayonnaise, lemon juice, dill, parsley (or chives), capers, salt, and pepper. Mix well until smooth and refrigerate to allow flavors to meld while you prepare the burgers.
- Prepare the salmon mixture: In a medium mixing bowl, add the drained canned salmon, panko breadcrumbs, beaten egg, minced garlic, chopped scallions, Dijon mustard, lemon juice, fresh parsley, salt, and pepper. Stir gently but thoroughly to combine all ingredients evenly.
- Form the patties: Using your hands, shape the salmon mixture into 4 equal-sized patties. To help make uniform patties, press the mixture into a wide-mouthed mason jar lid or similar mold.
- Heat the skillet: Coat a large nonstick skillet or cast iron pan lightly with oil and heat over medium for about 1 minute until hot.
- Cook the patties: Carefully place the salmon patties in the hot skillet. Cook for about 4 minutes on each side, being gentle when flipping as salmon burgers can be fragile and may break.
- Assemble the burgers: Serve the cooked salmon burgers immediately on toasted buns with lettuce, sliced tomato, sliced onion, and a generous dollop of the prepared herb sauce for fresh and zesty flavor.
Notes
- Using canned wild salmon makes this recipe convenient without sacrificing flavor or nutrition.
- Be gentle when flipping the patties as salmon burgers are delicate and prone to breaking.
- For extra crispiness, lightly toast the buns before assembling.
- You can substitute the capers in the herb sauce with chopped pickles for a similar briny flavor.
- These burgers can be served with a side salad or sweet potato fries for a complete meal.
