Ingredients
Pasta
- 8 ounces Bow Tie Pasta (mini farfalle, uncooked)
Vegetables & Herbs
- 1 medium Onion (chopped)
- 1 medium Red Bell Pepper (chopped)
- 4 Garlic Cloves (minced)
- 1 teaspoon Oregano
- 1 teaspoon Basil
- 4 Asparagus spears (cut into bite-sized pieces)
- 1/2 pint Portobello Mushrooms (quartered)
- 1/2 pint Grape Tomatoes (cut in half)
Protein & Others
- 1 pound Chicken (cooked, chopped or shredded)
- 3 ounces Black Olives (drained, sliced)
- 2 tablespoons Olive Oil
- 4 tablespoons Butter (cut into 4 equal pieces)
- 1 teaspoon Salt
- 1 teaspoon Pepper
Instructions
- Cook Pasta: Begin by bringing a large pot of salted water to a boil. Cook the bow tie pasta according to package instructions until al dente. Drain pasta and set aside.
- Sauté Aromatics and Seasonings: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chopped onion, red bell pepper, minced garlic, oregano, basil, salt, and pepper. Stir and cook until the onions become transparent, about 5 minutes.
- Add Vegetables: Add asparagus pieces and quartered mushrooms to the skillet. Stir and continue cooking on medium-high heat for an additional 3 to 5 minutes, allowing the vegetables to soften.
- Add Chicken and Olives: Incorporate the cooked, chopped rotisserie chicken and sliced black olives into the skillet. Stir and cook for about 3 minutes until heated through.
- Add Butter and Tomatoes: Stir in the four pieces of butter, allowing them to melt and coat the ingredients. Continue cooking on medium-high heat for 3 more minutes. Remove the skillet from heat, then fold in the halved grape tomatoes gently.
- Combine Pasta and Sauce: If your skillet is large enough, add the drained pasta directly into it and toss to combine all ingredients. Otherwise, transfer everything to a large mixing bowl and mix well to ensure even distribution of flavors.
- Serve: Serve the pasta immediately while warm for the best taste and texture.
Notes
- Use leftover rotisserie chicken to save time and add rich flavor.
- Feel free to swap asparagus and mushrooms with other vegetables available like zucchini or broccoli.
- For a creamier dish, consider adding a splash of cream or grated Parmesan cheese just before serving.
- Adjust seasoning with additional salt and pepper to taste.
- Serve with a side salad or crusty bread for a complete meal.
