A refreshing and elegant Rosé Champagne Mojito cocktail that combines fresh mint, lime, white rum, and bubbly rosé champagne sweetened with a homemade champagne syrup. Perfect for a sophisticated yet easy-to-make summer drink.
Ingredients
Mojito Cocktail
- 6 to 8 fresh mint leaves
- 2 1/2 ounces of champagne syrup
- 1 ounce freshly squeezed lime juice
- 1 ounce white rum
- 2 ounces rosé champagne
- 1 lime (cut into wedges)
- Ice cubes
Champagne Syrup
- 1 cup rosé champagne
- 1 1/4 cups sugar
Instructions
- Prepare the Champagne Syrup: Combine 1 cup rosé champagne and 1 1/4 cups sugar in a saucepan over medium heat. Bring to a boil while whisking constantly until the sugar is completely dissolved. Turn off the heat and let the syrup cool to room temperature. The syrup will thicken slightly and can be stored in the refrigerator for several weeks.
- Make the Mojito: In the bottom of a glass, add 1 ounce of the cooled champagne syrup and 6 to 8 fresh mint leaves. Muddle the mint gently using a muddler or the blunt end of a screwdriver to release the mint’s essential oils and aroma without tearing the leaves too much.
- Add Ice and Lime: Fill the glass with ice cubes, then add a few lime wedges or slices for added citrus flavor and aroma.
- Add Spirits and Mix: Pour in 1 ounce white rum, the remaining 1 1/2 ounces of champagne syrup, 1 ounce freshly squeezed lime juice, and 2 ounces rosé champagne over the ice and mint. Stir gently with a long spoon or knife to combine all the flavors.
- Garnish and Serve: Finish by adding an additional large sprig of fresh mint on top for garnish and aroma, then serve immediately to enjoy the refreshing cocktail at its best.
