Ingredients

Roasted Vegetables

  • 2 turnips, peeled and cut into 2cm (½in) pieces
  • 2 small potatoes, peeled and cut into 2cm (½in) pieces
  • 1-2 carrots, peeled and cut into 2cm (½in) pieces
  • 1-2 parsnips, peeled and cut into 2cm (½in) pieces
  • 1 tbsp olive oil (for roasting)
  • Salt and pepper, to season

Vegetable Base and Sauce

  • 75 ml olive oil (remaining from total 90 ml)
  • 2 shallots, finely diced
  • 2 ribs celery, diced
  • 2 cloves garlic, minced
  • 20 g white miso paste
  • 10 g flat-leaf parsley, finely chopped
  • 5 g fresh thyme, finely chopped
  • 50 g plain (all-purpose) flour
  • 120 ml dry white wine
  • 500 ml vegetable stock
  • 500 ml whole milk
  • 50 g kale, torn from stems and chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Puff Pastry and Finishing

  • 300 g puff pastry (one store-bought sheet or half of rough puff pastry recipe)
  • 1 egg, beaten
  • Black pepper and flaky salt, for seasoning the pastry (optional)


Instructions

  1. Preheat and prepare vegetables. Preheat your oven to 220°C (425°F). In a large mixing bowl, combine the turnips, potatoes, parsnips, and carrots. Drizzle 1 tablespoon of olive oil over them, season generously with salt and pepper, and toss well to coat. Spread the vegetables on a parchment-lined baking sheet.
  2. Roast the root vegetables. Place the baking sheet in the preheated oven and roast the vegetables for 10-15 minutes, or until they start to brown and are just tender but still have some resistance when pierced with a fork.
  3. Sauté aromatics. While the vegetables roast, heat the remaining olive oil in a large saucepan over medium heat. Add the finely diced shallots and celery, sprinkle with a pinch of salt, and cook, stirring occasionally, until softened, about 5 minutes.
  4. Add garlic and miso paste. Stir in the minced garlic and white miso paste and cook for about 2 minutes, stirring frequently, until fragrant.
  5. Incorporate herbs and flour. Add the chopped parsley, thyme, and flour to the pan. Stir constantly and cook for roughly 3 minutes to toast the flour, which helps create a rich flavor base.
  6. Deglaze with wine. Pour in the dry white wine and cook until the alcohol smell dissipates and the wine is fully absorbed by the flour mixture.
  7. Add liquids and combine vegetables. Gradually whisk in the vegetable stock and whole milk to prevent lumps. Stir in the roasted vegetables, kale, and lemon zest. Bring the mixture to a gentle simmer and cook for about 5 minutes, allowing the kale to soften and wilt. Remove from heat and stir in lemon juice. Taste and adjust seasoning as needed.
  8. Prepare the puff pastry. On a well-floured surface, roll out the puff pastry sheet until about 5mm thick and sized to cover a 20cm (8in) square baking dish. Trim the pastry if needed.
  9. Assemble the pot pie. Pour the vegetable filling into the baking dish. Lay the puff pastry over the top, pressing edges to seal. Brush the pastry with the beaten egg and, if desired, sprinkle with black pepper and flaky salt.
  10. Bake until golden and bubbly. Place the assembled pot pie on a rimmed baking sheet to catch any drips and bake in the oven at 220°C (425°F) for 15-20 minutes, or until the pastry is deeply golden, flaky, and crisp, and the filling is bubbling. Allow to cool for 5-10 minutes before serving.

Notes

  • Make sure the root vegetables are cut into uniform pieces to ensure even roasting.
  • Use white miso paste for a subtle umami flavor; other miso types will alter the taste.
  • If you want a vegan variation, replace whole milk with a plant-based milk and omit the egg wash or use a plant-based alternative for brushing the pastry.
