Description

A wholesome roasted vegetable medley featuring chickpeas, sweet potatoes, broccoli, cauliflower, and onion, all perfectly caramelized in the oven. Paired with a creamy and tangy tahini-yogurt dressing that adds depth and richness, this dish is a flavorful and nutritious meal perfect for lunch or dinner.

Ingredients

Roasted Vegetables

  • 1 can (400 g) Chickpeas, drained and rinsed
  • 1 large Onion, sliced into wedges
  • 2 medium Sweet potatoes, cubed
  • 150 g Broccoli florets
  • 150 g Cauliflower florets
  • 2 tsp Seasonings (paprika, cumin, chili flakes, salt, pepper, adjust to taste)
  • 2-3 tbsp Olive oil

Creamy Tahini-Yogurt Dressing

  • 2 tbsp Tahini
  • 120 g Vegan or Greek yogurt
  • 2 tbsp Lemon juice
  • Salt and pepper, to taste
  • 1 clove Garlic, minced or grated
  • 2 tbsp Olive oil
  • 1 tsp Mustard
  • 1 tsp Agave syrup (or honey if not vegan)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for roasting the vegetables.
  2. Prepare the Vegetables: On a large sheet pan, evenly spread out the drained chickpeas, sliced onion wedges, cubed sweet potatoes, broccoli florets, and cauliflower florets. Drizzle 2-3 tablespoons of olive oil over them. Sprinkle with the seasoning blend including paprika, cumin, chili flakes, salt, and pepper. Toss everything thoroughly to ensure an even coating of oil and spices.
  3. Roast the Vegetables: Place the sheet pan in the preheated oven and roast for 25 to 30 minutes. Halfway through, toss the vegetables and chickpeas to promote even caramelization. Roast until the vegetables are tender and have developed a slight caramelized edge.
  4. Make the Dressing: While the vegetables roast, whisk together in a small bowl the tahini, vegan or Greek yogurt, lemon juice, salt, pepper, minced garlic, olive oil, mustard, and agave syrup. If the dressing is too thick, add a little water, one teaspoon at a time, until it reaches a creamy but pourable consistency.
  5. Assemble and Serve: Remove the roasted vegetables and chickpeas from the oven. On a serving plate, spread a layer of the tahini-yogurt dressing as a base. Top with the warm roasted vegetable mixture. Optionally, garnish with fresh parsley, sesame seeds, or a drizzle of chili oil for extra flavor and presentation.

Notes

  • You can substitute the sweet potatoes with other root vegetables like carrots or butternut squash.
  • Adjust the seasoning blend to suit your spice tolerance; chili flakes add heat but can be omitted for a milder flavor.
  • For a dairy-free dressing, be sure to use vegan yogurt.
  • This recipe keeps well as leftovers and is great served warm or at room temperature.
  • Adding fresh herbs like parsley or cilantro as garnish enhances the freshness of the dish.
