Description

This Roasted Tomato Hummus recipe combines the sweet, smoky flavor of air-fried cherry tomatoes with creamy chickpeas and fresh basil, resulting in a vibrant, healthy dip perfect for snacks or appetizers. Ready in just 18 minutes, it’s an easy twist on classic hummus that adds a burst of color and flavor.

Ingredients

Vegetables and Herbs

  • 2 cups cherry tomatoes (roasted in the air fryer)
  • 1 small handful fresh basil leaves (plus a few for garnish)

Legumes

  • 1 ½ cups cooked chickpeas (1 can, 15 oz, drained and rinsed)

Liquids and Oils

  • ½ lemon (juiced)
  • 3 tablespoons extra virgin olive oil (plus more for serving)
  • 2 to 3 tablespoons water (as needed)

Spices

  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Roast the tomatoes: Place the cherry tomatoes in the air fryer basket and roast until they become soft and slightly golden, about 8-10 minutes. Allow them to cool for a few minutes before proceeding.
  2. Prepare ingredients for blending: In a food processor or blender, combine the roasted tomatoes with their juices, cooked chickpeas, fresh basil, lemon juice, olive oil, salt, and black pepper.
  3. Blend until creamy: Process the mixture until smooth and creamy, scraping down the sides of the bowl as necessary. If the hummus is too thick, add water one tablespoon at a time until desired consistency is achieved.
  4. Adjust seasoning: Taste the hummus and add more salt or lemon juice if needed to balance the flavors.
  5. Serve: Transfer the hummus to a serving bowl. Create a swirl on the surface with a spoon, then drizzle with extra olive oil, garnish with fresh basil leaves, some roasted cherry tomatoes, and a pinch of black pepper for added flavor and presentation.

Notes

  • For a smoother hummus, peel the chickpeas before blending.
  • Customize the heat by adding a pinch of cayenne pepper or smoked paprika.
  • Use fresh lemon juice for the best flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
