Vegetables

  • 1 pound sweet potatoes, cut into 1 ¼-inch cubes
  • ¾ pound carrots, cut into 1 ¼-inch pieces
  • ¾ pound parsnips, cut into 1 ¼-inch pieces
  • 1 acorn squash, seeded and cut into 1 ¼-inch pieces
  • 1 large red onion, peeled with root end left intact, cut into ½-inch wedges

Glaze and Seasoning

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh thyme leaves (or rosemary)
  • Salt and black pepper, to taste

Instructions

  1. Preheat: Preheat your oven to 425°F (220°C). Prepare your baking equipment by spraying an extra-large rimmed baking sheet (20×15 inches) or two large baking sheets (18×12 inches) with nonstick cooking spray to prevent sticking.
  2. Combine: In a large mixing bowl, add the cubed sweet potatoes, chopped carrots, parsnips, acorn squash pieces, and red onion wedges. Pour in the extra-virgin olive oil, balsamic vinegar, maple syrup, and sprinkle fresh thyme leaves over the vegetables. Generously season the mixture with salt and freshly ground black pepper. Toss everything together thoroughly to ensure each piece is well coated with the glaze and seasoning.
  3. Roast: Spread the coated vegetables evenly on the prepared baking sheet(s) in a single layer, making sure not to overcrowd to allow proper roasting. Place the sheet(s) in the preheated oven and roast uncovered for 40 to 45 minutes. Halfway through the cooking time, stir the vegetables to promote even browning and caramelization. Roast until the vegetables are tender and nicely browned.
  4. Serve: You can serve the roasted root vegetables immediately or make them up to 3 hours in advance. If prepared ahead, transfer the vegetables to a clean baking sheet and allow them to come to room temperature. Rewarm in the oven at 375°F (190°C) for 10 to 15 minutes before serving. Complement the vegetables with optional Carrot Top Cashew Pesto for an added fresh and nutty flavor.
