Description

Crispy on the outside and tender on the inside, these roasted red potatoes are seasoned with garlic powder and Italian herbs for a flavorful, easy-to-make side dish perfect for any meal.

Ingredients

Potatoes

  • 2 pounds red potatoes, chopped into ¾-inch pieces (do not peel)

Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425°F. Prepare a rimmed baking sheet by lining it with parchment paper to prevent sticking and ease cleanup.
  2. Season Potatoes: In a large bowl, place the chopped red potatoes. Drizzle with olive oil and toss well to coat each piece. Sprinkle garlic powder, Italian seasoning, salt, and black pepper evenly over the potatoes, tossing again until the seasonings are thoroughly distributed.
  3. Arrange and Roast: Spread the seasoned potatoes evenly on the prepared baking sheet, making sure to leave some space between pieces for optimal crisping. Bake in the preheated oven for 30 to 40 minutes, tossing the potatoes halfway through the cooking time to ensure even roasting. The potatoes are done when they’re tender inside and crispy on the edges—usually around 35 minutes.
  4. Serve: Remove from the oven and serve immediately. Taste and add additional salt if desired for extra flavor.

Notes

  • Do not peel the red potatoes; the skin helps retain nutrients and adds texture.
  • Tossing the potatoes halfway through cooking ensures even browning and crispiness.
  • You can use parchment paper or a silicone baking mat to prevent sticking.
  • Adjust seasonings to taste or add fresh herbs like parsley for garnish.
  • Serve as a versatile side dish with meats, fish, or plant-based meals.
