Beets

Dressing

  • 1/3 cup canola oil or vegetable oil
  • 2-3 tablespoons honey, to taste
  • 2 tablespoons chopped fresh dill
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Prepare Beets: Preheat your oven to 375°F (190°C). Peel the beets and make thin, evenly spaced slices in the side of each beet to create the classic ‘hasselback’ effect without cutting all the way through. Place the sliced beets on a non-stick or lightly oiled rimmed baking sheet.
  2. Season and Roast: Drizzle the beets with half of the oil, then season with salt and freshly ground black pepper. Cover the baking sheet tightly with aluminum foil and roast the beets in the preheated oven for 1 hour until they are tender and a knife pierces through easily.
  3. Make the Dill Dressing: While the beets roast, whisk together the white wine vinegar, remaining oil, honey, chopped fresh dill, salt, and black pepper in a glass mixing bowl until well combined.
  4. Serve: Once the beets are done roasting, remove from the oven and let cool slightly. Drizzle the dill dressing evenly over the warm roasted hasselback beets just before serving, allowing the flavors to meld beautifully.
