Description
A flavorful and easy-to-make roasted vegetable dish featuring zucchini, yellow squash, and Campari tomatoes, enhanced with garlic, Italian seasoning, and a golden Parmesan cheese topping. Perfect as a warm side dish for any meal.
Ingredients
Vegetables
- 2 small zucchini (1 lb), cut into 1/2-inch thick slices
- 2 small yellow squash (1 lb), cut into 1/2-inch thick slices
- 14 oz Flavorino or small Campari tomatoes, sliced into halves
Seasoning and Topping
- 3 Tbsp olive oil
- 4 cloves garlic, minced (1 1/2 Tbsp)
- 1 1/4 tsp Italian seasoning
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 cup (2.4 oz) finely shredded Parmesan cheese
- Fresh or dried parsley, for garnish (optional)
Instructions
- Preheat the oven: Preheat your oven to 400 degrees Fahrenheit. Line an 18 by 13-inch rimmed baking sheet with parchment paper or aluminum foil to prevent sticking and for easy cleanup.
- Prepare the olive oil mixture: In a small bowl, whisk together the olive oil, minced garlic, and Italian seasoning. For best flavor, let this mixture rest for 5 to 10 minutes to allow the flavors to infuse.
- Toss the vegetables: Place the sliced zucchini, yellow squash, and halved tomatoes into a large mixing bowl. Pour the olive oil mixture over the vegetables and gently toss them with your hands until they are evenly coated.
- Arrange and season: Spread the coated vegetables evenly on the prepared baking sheet. Season with salt and freshly ground black pepper to taste. Sprinkle the finely shredded Parmesan evenly over the top.
- Roast the vegetables: Roast in the preheated oven for 25 to 30 minutes, or until the vegetables are tender and the Parmesan topping is golden brown and crispy.
- Garnish and serve: Optionally, sprinkle fresh or dried parsley over the roasted vegetables before serving. Serve warm as a delicious side dish.
Notes
- Allowing the olive oil, garlic, and Italian seasoning mixture to rest before coating the vegetables helps deepen the flavor.
- Using parchment paper or foil on the baking sheet makes cleanup easier and prevents sticking.
- You can substitute other small tomatoes if Campari tomatoes are unavailable.
- This dish is best served warm and pairs well with grilled or roasted meats.
- For a vegetarian option, this recipe is naturally suitable as is.
