Description

A flavorful roasted garlic butter infused with anchovy paste and parmesan, perfect for enhancing steaks, grilled chicken, fish, or steamed vegetables. This versatile butter combines rich, savory ingredients and can be served soft or chilled into slices for an elegant touch to any meal.

Ingredients

Roasted Garlic

  • 1 large head of garlic, cloves separated but skin on
  • 1 tsp olive oil
  • Pinch of salt

Butter Mixture

  • 2 tbsp roasted garlic (prepared as above)
  • 125g (1 stick / 8 tbsp) unsalted butter, softened
  • 1 tsp anchovy paste (or finely chopped whole anchovies)
  • 25g (1/4 cup very tightly packed) parmesan, finely grated
  • 1/4 tsp kosher salt
  • 1 tbsp parsley, finely minced (optional)

Instructions

  1. Prepare Roasted Garlic: Preheat the oven to 180°C/350°F (160°C fan-forced). Place the separated garlic cloves with skin on a sheet of foil, drizzle with olive oil and sprinkle a pinch of salt. Enclose the garlic completely in the foil packet.
  2. Roast Garlic: Place the foil packet in the preheated oven and roast for 30 minutes, or until the garlic is soft and paste-like. To check, carefully open the foil and test the largest clove for tenderness.
  3. Extract Garlic Paste: Once cool enough to handle, squeeze the roasted garlic cloves’ flesh out of their skins into a small bowl. Set aside 2 tablespoons for the butter mixture.
  4. Combine Butter Ingredients: In a separate bowl, mix the softened butter, roasted garlic paste, anchovy paste, finely grated parmesan, and kosher salt.
  5. Blend the Butter: Using a stick blender, blitz the mixture until smooth and fully combined. Stir in the minced parsley if using for added freshness and color.
  6. Serve or Store: Use immediately by adding a dollop on steak, grilled chicken, fish, or steamed vegetables. Alternatively, chill the butter in a log shape in the refrigerator until firm, then slice and serve.

Notes

  • You can roast the garlic alongside a meat roast such as a rump cap at 140°C/285°F (120°C fan-forced) for about 1 hour.
  • The anchovy paste adds a subtle umami depth but can be adjusted to taste or omitted for a milder butter.
  • The butter is delicious served soft but also holds its shape well when refrigerated.
  • Parsley is optional but adds a lovely fresh contrast to the rich butter.
