Ingredients
Vegetables
- 1 bag frozen broccoli florets (16-ounce), do not thaw
Seasonings and Toppings
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- Freshly ground black pepper, to taste
- 1/4 cup grated Parmesan cheese
- 1 medium lemon, halved
Instructions
- Preheat the oven: Preheat your oven to 450°F (232°C), placing one rack in the center and another near the top. Place a rimmed baking sheet in the oven while it heats to get it hot.
- Prepare the broccoli: In a large bowl, toss the frozen broccoli florets with olive oil, kosher salt, and several grinds of freshly ground black pepper until the florets are evenly coated with the seasoning.
- Arrange on baking sheet: Using oven mitts, carefully remove the hot baking sheet from the oven. Spread the seasoned broccoli out in a single layer on the baking sheet for even roasting.
- Roast the broccoli: Place the baking sheet on the middle oven rack and roast the broccoli for 15 to 18 minutes, or until the florets are tender and lightly browned around the edges.
- Broil with Parmesan: Remove the baking sheet from the oven and switch the oven setting to broil. Evenly sprinkle the grated Parmesan cheese over the roasted broccoli.
- Finish under the broiler: Place the baking sheet on the top rack and broil for 1 to 2 minutes, watching carefully, until the cheese is melted and lightly golden brown.
- Add lemon and serve: Remove the baking sheet from the oven and immediately squeeze the juice from half of the lemon over the broccoli. Toss gently to combine. Slice the remaining lemon half into wedges and serve alongside the broccoli for extra brightness.
Notes
- Do not thaw the frozen broccoli before roasting to achieve the best crispy texture.
- Keep an eye on the broccoli during broiling as the cheese can burn quickly.
- Use a rimmed baking sheet to prevent any olive oil or cheese from spilling in the oven.
- For extra flavor, add minced garlic or red pepper flakes when tossing the broccoli with olive oil.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer.
